PALEO CARROT CAKE BANANA BREAD

Ingredients

  • 3 eggs
  • 2 super ripe bananas
  • 2 1/4 cups almond flour
  • 1/4 cup coconut sugar
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • pinch salt
  • 1/4 cup raisins
  • 3/4 cup grated carrots (about 3)
  • 2 tbsp Primal Palate apple pie spice (or 1 tb cinnamon, 1/4 tsp nutmeg)
  • 1/4 cup coconut oil, melted
  • 3/4 container Simple Mills vanilla frostingâ

Instructions

  • Preheat oven to 350.
  • Line a loaf pan with parchment paper and set aside.
  • In a medium bowl, mash the banana well.
  • Add the egg and coconut oil, and whisk until well combined and set aside.
  • In a large bowl, mix together the almond flour, coconut sugar, baking soda, baking powder, apple pie spice (or cinnamon/nutmeg), and salt.
  • Pour wet ingredients into the bowl with the dry ingredients.
  • Fold in the carrots and the raisins.
  • Pour batter into the loaf pan and use a spatula to make even.
  • Bake for 40-45 minutes, or until a toothpick comes out clean.
  • Remove from oven and let cool completely before frosting!
  • Slice and get ready for pure bliss.
