Preheat oven to 350.
Line a loaf pan with parchment paper and set aside.
In a medium bowl, mash the banana well.
Add the egg and coconut oil, and whisk until well combined and set aside.
In a large bowl, mix together the almond flour, coconut sugar, baking soda, baking powder, apple pie spice (or cinnamon/nutmeg), and salt.
Pour wet ingredients into the bowl with the dry ingredients.
Fold in the carrots and the raisins.
Pour batter into the loaf pan and use a spatula to make even.
Bake for 40-45 minutes, or until a toothpick comes out clean.
Remove from oven and let cool completely before frosting!
Slice and get ready for pure bliss.
