To make this baked peach, start by washing the peach. Once it is washed, slice it in half, being sure to remove and discard the pit.
Next, place the peach cut-side down, into the basket of an air fryer or in a glass baking dish.
Preheat the oven or air fryer to 400 F, then place the peach in. If using an air fryer, cook for 8 minutes, and if using an oven, cook for 12.
While the peach is cooking, prepare the olive oil mixture by mixing together the olive oil, coconut sugar, and vanilla extract in a small bowl. Set it aside until the peach is done.
Once the peach is done, carefully remove it from the air fryer or oven and flip each half over, so the cut side is up.
Carefully spoon the olive oil mixture into the crevice of each peach slice, then place them back into the oven or air fryer.
Cook the peaches for another 8 minutes in the air fryer, or another 12 minutes in the oven.
Once the peach is done, remove it from the air fryer or oven and allow it to cool for just a moment.
Then, top it with a scoop of vanilla ice cream and more olive oil drizzle, if desired. Serve, then enjoy!
