This Single Serving Olive Oil Baked Peach is the perfect way to use summertime peaches. It’s sweet, warm, and filled with a delicious, sugar-and-olive oil mixture that perfectly caramelizes as it bakes, bringing out all of the natural sugars. Plus, this peach is served alongside a big scoop of vanilla ice cream, for a truly perfect summertime treat.

Friends, if there’s one ingredient that I can’t get enough of in the summertimes, it’s peaches. They are crisp on the outside, sweet and juicy on the inside, and because they’re only in-season for a short amount of time, I try to make the most of them every year. Whether that means making my Best Ever Paleo Peach Crisp, or my cool and refreshing Summer Peach Gazpacho, there are so many delicious and versatile ways to enjoy peaches, aside from just eating them on their own.

But on the days where I just want a single-serving dessert and don’t want to go through the hassle of making an entire peach crisp, for example, this recipe comes in as a true winner. It’s made with just a single peach, a handful of healthy ingredients, and is baked in the oven until it becomes gooey and sweet. Think of it like the inside of a peach cobbler or crisp, but even better! This Single Serving Olive Oil Baked Peach is filled with a mixture of olive oil, coconut sugar, and vanilla extract for a delicious and healthy treat. Plus, I love topping it with vanilla ice cream, because let’s be honest: nothing is better in the summertime than ice cream! My favorite ice cream is by a company called Frankie and Jo’s, but you can use any vanilla ice cream that you’d like. Or, any other flavor that you’d prefer!

Plus, this recipe would work well with other types of stone fruit as well, such as nectarines. Or, even try it with apples! Feel free to get creative with this recipe. It’s the perfect way to have dessert when you’re not trying to cook for a crowd.

6 Delicious Ingredients to Make This Warm Baked Peach

All you need are 6 easy ingredients in order to make this delicious, warm, gooey baked peach. It really doesn’t get any better than that!

  • Peach: Because this is a single-serving recipe, you will only need a single peach in order to make it! This is the perfect recipe to make during the summertime, because peaches are in peak-season, which means they are sweet and delicious!
  • Olive Oil: Olive oil and peaches go together like bread and butter. They are rich, delicious, and the olive oil baked into the peach is a match made in heaven. Plus, the olive oil adds in a dose of healthy fats that makes this recipe perfectly filling, without being heavy.
  • Vanilla Extract: A touch of vanilla extract adds the perfect flavor to this peach.
  • Coconut Sugar: When the coconut sugar is mixed with the olive oil and vanilla extract, it will caramelize and add a beautifully sweet “crust” to the inside of this peach. You can also use traditional sugar, if you prefer.
  • Sea Salt: A pinch of sea salt helps to balance out the flavors of this peach, to ensure it doesn’t turn out too sweet.
  • Vanilla Ice Cream: This is optional, but I highly recommend serving this peach with a big scoop of vanilla ice cream. The cold ice cream with the sweet peach comes together to make this recipe truly taste like dessert.

To make this baked peach, start by washing the peach. Once it is washed, slice it in half, being sure to remove and discard the pit.

How to Make The Ultimate Single-Serving Dessert

To make this baked peach, start by washing the peach. Once it is washed, slice it in half, being sure to remove and discard the pit. Next, place the peach cut-side down, into the basket of an air fryer or in a glass baking dish. Preheat the oven or air fryer to 400 F, then place the peach in. If using an air fryer, cook for 8 minutes, and if using an oven, cook for 12.

While the peach is cooking, prepare the olive oil mixture by mixing together the olive oil, coconut sugar, and vanilla extract in a small bowl. Set it aside until the peach is done.

Serve this baked peach with a sprinkle of flaky sea salt and a side of vanilla ice cream.

Once the peach is done, carefully remove it from the air fryer or oven and flip each half over, so the cut side is up. Carefully spoon the olive oil mixture into the crevice of each peach slice, then place them back into the oven or air fryer.

Cook the peaches for another 8 minutes in the air fryer, or another 12 minutes in the oven. Once the peach is done, remove it from the air fryer or oven and allow it to cool for just a moment. Then, top it with a scoop of vanilla ice cream and more olive oil drizzle, if desired. Serve, then enjoy!

  • 2 Teaspoons Olive Oil plus more for drizzling on top
  • 1/2 Teaspoon Vanilla Extract
  • 1 Teaspoon Coconut Sugar
  • 1 Pinch Flaky Sea Salt
  • 1 Scoop Vanilla Ice Cream
