    CHICKEN LETTUCE CUPS

    Ingredients

    • 1 pound ground chicken⁣
    • 1 onion, diced⁣
    • 4 cloves garlic, mashed⁣
    • 1 tablespoon ground ginger⁣
    • 1 8 oz can water chestnuts, diced⁣
    • ¼ cup chopped green onion⁣
    • 1 tablespoon avocado oil⁣
    • ½ head butter lettuce⁣
    ⁣FOR THE SAUCE:
    • 2 tablespoons rice vinegar⁣
    • 3 tablespoons gluten free hoisin sauce⁣
    • 2 tablespoons sesame oil⁣
    • 4 tablespoons soy sauce or coconut aminos, for a gluten free option⁣
    • 1 tsp siracha ⁣

    Instructions 

    1. Sauté the onion, garlic and ginger in the avocado oil, about 3 minutes.
    2. Next, add the chicken and continue sautéing, breaking down the chicken.
    3. While that’s cooking, prepare the sauce by whisking together above sauce ingredients.
    4. Pour the sauce into the chicken mixture and then let it cook for another few minutes, so the sauce thickens.
    5. Stir in the green onion and water chestnuts.
    6. Fill your lettuce cups with the chicken mixture and enjoy!
