Ingredients
- 1 pound ground chicken
- 1 onion, diced
- 4 cloves garlic, mashed
- 1 tablespoon ground ginger
- 1 8 oz can water chestnuts, diced
- ¼ cup chopped green onion
- 1 tablespoon avocado oil
- ½ head butter lettuce
FOR THE SAUCE:
- 2 tablespoons rice vinegar
- 3 tablespoons gluten free hoisin sauce
- 2 tablespoons sesame oil
- 4 tablespoons soy sauce or coconut aminos, for a gluten free option
- 1 tsp siracha
Instructions
- Sauté the onion, garlic and ginger in the avocado oil, about 3 minutes.
- Next, add the chicken and continue sautéing, breaking down the chicken.
- While that’s cooking, prepare the sauce by whisking together above sauce ingredients.
- Pour the sauce into the chicken mixture and then let it cook for another few minutes, so the sauce thickens.
- Stir in the green onion and water chestnuts.
- Fill your lettuce cups with the chicken mixture and enjoy!
