My viral cucumber salad recently took TikTok by storm, and now, I’ve created a twist on that viral recipe, but with a special, new ingredient: radish. That’s right, my Cucumber Radish Salad is a bright, vibrant. refreshing salad that is sure to satisfy both your taste buds and your tummy. This salad is naturally gluten-free, vegetarian-friendly, and can easily be made dairy-free with a simple substitution. Say goodbye to overly-complicated salad recipes, because this recipe proves that sometimes, simple really is better!

Friends, have you ever made a salad so delicious, you wake up CRAVING IT? To be honest, it’s only happened for me a handful of times. While I absolutely LOVE a good salad recipe, there’s a difference between a delicious salad and a crave-worthy one. What is the difference, you may ask? To be honest, I couldn’t tell you. In fact, finding that crave-worthy salad recipe that keeps you up at night is kind of like finding the right partner; you don’t really know what you want until you find it!
So, needless to say, this phenomenon has only happened to me a few times; first, with my signature Ultimate Kale Salad with Creamy Lemon Tahini Dressing. Second, with my Copycat Hillstone Emerald Kale Salad (which may just be one of my favorite recipes of 2022!) And third, of course, with this Cucumber Radish Salad. I’m telling you guys, it’s really that good.
And what makes this salad so good is truly that it is so SIMPLE. There’s no complicated ingredients, no intricate prep. Just a few simple and easy steps to make the crispy, crunchy, veggie-packed salad of your dreams. If you are someone who finds themselves buying store-bought salads because making your own takes too much time (I get it!) then this is the perfect recipe for you. It’s fast, it’s easy, and it’s perfect for the days where you really don’t have time to make anything complicated.


What You Need to Make This Crisp Cucumber Salad
This crisp, crunchy, cucumber salad comes together with only 8 ingredients! Did I mention that it’s so easy?!
- English Cucumber: It wouldn’t be a cucumber salad without the cucumbers, after all! I love using English cucumber in this recipe because it’s nice and crispy, and slices perfectly thin with a mandolin.
- Green Onions: Fresh, green onions perfectly compliment the flavors of the cucumber and radishes.
- Radishes: Of course, you also need radishes to make this Cucumber Radish Salad!
- Fresh Dill: Fresh dill adds the perfect, herbaceous touch to this salad. Don’t skip it! Plus, the combination of dill and greek yogurt is a truly delicious pairing.
- Garlic: Fresh garlic adds the perfect flavor to this salad, and I will always recommend it over garlic powder!
- Greek Yogurt: Instead of using mayo in this recipe, we’ll be using greek yogurt to give this salad its perfect, creamy texture. If you want to keep this salad vegan-friendly or dairy-free, you can use a plant-based yogurt instead!
- Red Wine Vinegar: A splash of red wine vinegar helps to cut through the thickness of the yogurt and form the perfect dressing!
- Sea Salt and Black Pepper: Of course, we’re finishing off this salad with a healthy dose of sea salt and black pepper, because no salad would be complete without it!

How to Make This Crunchy, Veggie-Packed Salad
Making the salad is truly the easiest part! Simply start by washing and chopping your vegetables. Slice your cucumber and radish thin using a sharp knife or a mandolin, and place them into a large bowl.
Next, chop your dill, green onions, and garlic thin, and add them to the bowl with the cucumber and radish. Finally, add in the remaining ingredients – the greek yogurt, red wine vinegar, sea salt, and black pepper. Toss until all of the ingredients are fully combined, then serve and enjoy! Store any leftovers in an airtight container in the fridge for up to three days.

Instructions
