If you’re looking for a crispy, low-carb alternative to bread that satisfies pizza cravings, you’re going to love this Crunchy Pepperoni Wrap. It swaps a tortilla or bread for layers of melted mozzarella cheese and pepperoni, baked together until golden and perfectly crisp. The result? A cheesy, crunchy “wrap” that tastes just like a slice of pepperoni pizza, but without the crust. Fill it with whatever you like, but my personal preference is romaine lettuce, turkey, sprouts, tomatoes, pickles, and some spicy ranch for a quick, high-protein lunch that hits every craving in one bite.

Friends, I don’t know about you, but when I’m craving something quick and satisfying, I always end up reaching for a wrap like my Viral Low Carb Zucchini Wraps or my Viral Cottage Cheese Flatbread. They’re the perfect solution when you want something that feels comforting but comes together super quick. No matter what’s going on that day, wraps always hit the spot.

That said, I don’t always love the heaviness of bread or tortillas. Sometimes, I just want something lighter and won’t leave me feeing sluggish afterward. That’s exactly where this Crunchy Pepperoni Wrap comes in. Instead of using traditional bread, this version uses layers of melted mozzarella cheese and pepperoni to form a crispy, golden shell that’s low-carb, high-protein, and tastes just like a bite of pepperoni pizza.

Once the cheese and pepperoni bake together and cool slightly, they firm up into the most perfect, crunchy “wrap” base. From there, you can fill it with anything you like. I really enjoy turkey, lettuce, sprouts, tomatoes, pickles, and spicy ranch. It’s the ultimate combination of crisp, creamy, and fresh, all in one bite.

This is so simple to make and even easier to customize. You can load it up with your favorite sandwich ingredients, or mix it up depending on what you have in the fridge. However you build yours, this wrap delivers on both flavor and texture.

To make this wrap, you’ll need shredded mozzarella cheese, pepperoni, romaine lettuce, turkey, sprouts, tomatoes, pickles, and spicy ranch.
A hand sprinkles shredded cheese over a rectangular baking sheet lined with parchment paper. Surrounding the sheet are plates of pepperoni, deli meat, lettuce, a bowl of sauce, and greens on a light countertop.
Line a baking sheet with parchment paper. Next, spread the shredded mozzarella evenly on the tray, shaping it with your hands to make a rectangle.

What You Need to Make This Low-Carb Pepperoni Wrap

    • Mozzarella Cheese: The base of this wrap! When baked, the mozzarella melts into a golden, crispy layer that holds everything together.
    • Pepperoni: The star that brings all the pizza vibes. As it bakes, the pepperoni gets nice and crispy and adds just the right amount of savory, smoky flavor to every bite.
    • Romaine Lettuce: Adds a refreshing crunch that balances the richness of the cheese and pepperoni. It also keeps the wrap feeling light and fresh.
    • Turkey: A lean, protein-packed filling that makes the wrap satisfying and hearty enough for lunch or dinner.
    • Sprouts: Bring in a little texture and a mild earthy note that pairs great with the cheesy base.
    • Tomatoes: Juicy and bright, they add a burst of freshness that cuts through the richness.
    • Pickles: For a tangy, crunchy bite that wakes everything up.
    • Spicy Ranch: The creamy, zesty finishing touch that ties the whole wrap together and makes each bite pop.
A hand places pepperoni slices on a rectangular sheet of dough covered with shredded cheese, set on a parchment-lined baking sheet. Bowls of cheese, pepperoni, sauce, and greens are nearby.
Then, add the pepperoni slices in six rows of four, covering the cheese completely.

How to Make This Crunchy Pepperoni Wrap

To make this wrap, start by preheating your oven to 350°F. Line a baking sheet with parchment paper. Next, spread the shredded mozzarella evenly on the tray, shaping it with your hands to make a rectangle. Then, add the pepperoni slices in six rows of four, covering the cheese completely.

Place the tray in the oven and bake for 15 minutes, or until the edges have browned. Once baked, remove the tray from the oven and let it sit to cool and harden for 5–6 minutes. After it has cooled slightly, lift the wrap off the sheet and flip it over. Add your fillings on one side of the wrap — romaine lettuce, turkey, sprouts, tomatoes, pickles, and spicy ranch. Finally, fold it closed, cut it in half, and enjoy right away.

    Frequently Asked Questions

can i make this without pepperoni?

Sure! Try with turkey pepperoni, salami, or skip it and just use cheese as the base.

    can.i make this dairy-free?

I haven’t tested it, but you could try a dairy-free mozzarella that melts and crisps well.

how do i keep it from getting soggy?

Let the wrap cook completely before adding the fillings and avoid heavy sauces. A little spicy ranch goes a long way!

    is this recipe keto-friendly?

Yes! With no bread or grains, it’s naturally low-carb and ket-friendly.

can i use a different type of cheese?

Mozzarella really does melt the best, but you could try some other shredded blends if you’d like.
