    Three words: Pizza Potato Cups. I mean truly, is there anything better? This is such a fun breakfast-on-the-go idea that comes together in minutes. When my friend, Erin, of @seriousfoodfetish posted a her version of these tater tot pizza cups the other day, I knew I had to make my own version. After all, what could be better than tater tots and pizza?! My boys are obsessed with this recipe, and if you have kids (like mine) that love pizza, then they’re absolutely going to love it, too.

    One of the most unique parts about this recipe, too, is that it’s naturally gluten-free! In this recipe, the tater tots replace the traditional flour crust for a delicious, crunchy, potato alternative. Just make sure that the tater tots that you use are gluten-free! My favorite brand of frozen tater tots are by Alexia.

    In addition to being so easy to throw together, this recipe is also incredibly versatile, too. If you want to make it vegetarian-friendly, simply omit the pepperoni or replace it with a meat-free alternative. To make this recipe vegan-friendly, simply replace the meat and cheese with vegan alternatives, like these dairy-free shreds. It’s that easy!

    To make these pizza cups, you will need tater tots, shredded mozzarella cheese, pizza sauce or marinara sauce, pepperoni, Italian seasoning, and basil.

    Take 4-5 of the tater tots and place them into the cavity of a muffin tin. Repeat until all of the cavities are filled with tots! Then, place the muffin tray full of tots into the oven for 11 minutes.

    What You Need to Make These Gluten-Free Pizza Cups

    You only need 6 simple ingredients in order to bring these Crunchy Pizza Potato Cups to life! This recipe is so simple to throw together in a pinch, for a fun, kid-friendly weeknight dinner or snack.

    • Frozen Tater Tots: Instead of using a pizza crust, this recipe comes together with frozen tater tots. What could be better than that?
    • Shredded Mozzarella Cheese:  I love using shredded mozzarella cheese in this recipe. It melts and stretches and adds the perfect, gooey, cheesy texture!
    • Pizza Sauce or Marinara Sauce: Of course, any good pizza recipe needs marinara sauce. I use a pre-made marinara sauce, but you can also make your own, if you’re feeling fancy!
    • Pepperoni: I love pepperoni pizza, so adding pepperoni slices to these pizza cups is perfect! If you want to make this recipe vegetarian-friendly, you can always omit the pepperoni.
    • Italian Seasoning: A pinch of Italian seasoning adds the best flavor to these pizza cups.
    • Basil: This is optional, but I love garnishing these pizza cups with a sprinkle of fresh basil.

    Once the 11 minutes are up, remove the tray from the oven and use the back of a spoon or a shot glass to press down the tater tots, making an indentation in each one. Add the shredded mozzarella cheese to the tots, followed by the pizza sauce, another layer of cheese, pepperoni, and then Italian seasoning.

    How to Make These Bite-Sized Pizza Potato Cups

    To make these pizza cups, start by preheating your oven to 425 F. Next, take 4-5 of the tater tots and place them into the cavity of a muffin tin. Repeat until all of the cavities are filled with tots! Then, place the muffin tray full of tots into the oven for 11 minutes.

    Once the 11 minutes are up, remove the tray from the oven and use the back of a spoon or a shot glass to press down the tater tots, making an indentation in each one. This is how the tots will hold the filling! Add the shredded mozzarella cheese to the tots, followed by the pizza sauce, another layer of cheese, pepperoni, and then Italian seasoning.

    Then, place the tray back into the oven and allow the pizza cups to bake for 10 more minutes, until the tater tots are golden and crunchy and the cheese has melted.

    Allow the cups to cool for 15 minutes, so that the tots set and stick together. Garnish with fresh chopped basil, then serve and enjoy!

    Then, place the tray back into the oven and allow the pizza cups to bake for 10 more minutes, until the tater tots are golden and crunchy and the cheese has melted. Once they’re done, remove them from the oven.

    Allow the cups to cool for 15 minutes, so that the tots set and stick together. Garnish with fresh chopped basil, then serve and enjoy!

    • 4-5 Frozen Tater Tots, per muffin cavity; approximately 48-60
    • 1 Cup Shredded Mozzarella Cheese
    • ¾ Cup Pizza Sauce or Marinara Sauce
    • 12 Slices Pepperoni
    • 1 Tablespoon Italian Seasoning
    • Fresh Basil, chopped; for garnishing
