If there’s one viral smoothie recipe that you need to make this summer, it’s the Hailey Bieber Erewhon Skin Glaze Smoothie — and no, you do not need to fly to Los Angeles and spend $20+ to get it! This sweet and creamy strawberry smoothie comes together with skin-healthy collagen peptides and and a sweet strawberry glaze that truly makes this smoothie taste like dessert. Plus, it’s finished off with a big dollop of coconut cream, which is a classic when it comes to Erewhon smoothies, making this smoothie sweet and delicious!

I’m sure by now you’ve heard of the famous Erewhon smoothies. These smoothies have gone viral on social media over the last few years, and not just because of the taste. While Erewhon is known for being THE health food grocery store to rule all health food grocery stores, all of their delicious, healthy foods do come at a price. In fact, a single Erewhon smoothie will run you approximately $20 before tax and any additions… which is definitely a steep price. That being said, have I spent $20 on their smoothies before? Yes, yes I have. And, would I do it again? Yes, I would. Not every day, but luckily since I don’t live in Los Angeles anymore, I don’t have that problem. So, when I do go down there, getting one feels like an absolute treat!

But if you’re not local to Los Angeles, or if a $20 smoothie doesn’t fit into your budget (I COMPLETELY get it), then I’m excited to share my at-home version of one of their most popular smoothie recipes, that comes together at a fraction of the price. This is my version of the Hailey Bieber Erewhon Skin Glaze Smoothie, which will help you glow from the inside out. Think of it like an elevated strawberry smoothie with skin-healing benefits, thanks to a few key ingredients. The first is collagen powder, which can promote healthy skin, hair, and nails. I love collagen powder because it’s not gritty like protein powder, yet it’s packed with protein and healthy skin benefits! The second special ingredient in this smoothie is avocado. While this may seem like a wildcard to add, I promise that this smoothie doesn’t taste like avocados. The addition of the avocado just makes the smoothie taste smooth and creamy, while also adding in healthy fats which, you guessed it, help your skin to glow!

Plus, this smoothie is finished off with a delicious strawberry glaze (which is just a blend of strawberries and maple syrup… yum.) And, in typical Erewhon fashion, the glass is coated with a big dollop of fresh coconut cream, that truly adds the perfect finishing touch to this smoothie. If you are looking for a delicious, healthy twist on the classic strawberry smoothie, this recipe is it!

What You Need to Make This Better-Than-Erewhon Smoothie

  • Strawberries: Of course, it wouldn’t be a strawberry smoothie without the strawberries! You can use either fresh or frozen strawberries — either one works well.
  • Maple Syrup: A little maple syrup blends with the strawberries to make the thick and creamy strawberry glaze that truly takes this smoothie to the next level.
  • Banana: No smoothie is complete without the banana, in my opinion, and you’ll need a half of a frozen banana in order to make this recipe!
  • Dates: Dates are a true superfood that add both fiber and sweetness to this smoothie recipe. Don’t skip it!
  • Avocado: Do not skip the avocado here. Not only does it make the smoothie thick and creamy (without significantly impacting the flavor of it), but it also adds in healthy fats, which helps your skin glow from the inside out!
  • Collagen Peptides: Collagen peptides are the secret to making this smoothie recipe that helps your skin glow!
  • Milk: Pick your favorite milk and use it in this recipe! I like using whole milk, but any type of milk should work well.
  • Coconut Cream: If you’ve ever had an Erewhon smoothie, then you may know that one of the best parts about their smoothies is the fact that the cups are lined with light, delicious, fluffy coconut cream. You can use canned coconut cream, or even use Cocowhip if you prefer a more whipped cream texture!

Blend the smoothie until it’s smooth and creamy. Prepare the strawberry glaze by adding the frozen strawberries and maple syrup to the blender. Blend until smooth, then pour the glaze into the glass.

How to Make This Creamy Skin-Healthy Strawberry Smoothie

To make this smoothie, start by preparing the strawberry glaze. Add the frozen strawberries and maple syrup to a blender and blend until smooth. Once the glaze is done, transfer it into a glass and set it aside.

Next, rinse out the blender and dry it thoroughly before adding in the smoothie ingredients: the frozen strawberries, banana, dates, avocado, collagen peptides, and the milk. Blend until the smoothie is thick, smooth, and creamy.

Prepare the glass by taking a spoonful of the coconut cream and using it to coat the glass.
Then, assemble the smoothie. Add the strawberry glaze to the bottom of the glass, followed by the smoothie on top. Give the smoothie a stir, then serve it immediately and enjoy! This recipe yields one smoothie, but can easily be doubled to make two.

Ingredients

For the Strawberry Glaze:

  • ¾ Cup Fresh Strawberries⁣
  • 1 Teaspoon Maple Syrup

For the Smoothie:

  • 1 Cup Frozen Strawberries
  • ½ Banana
  • 2 Dates
  • ¼ Avocado
  • 1 Scoop Collagen Peptides
  • ¾ Cup Milk
  • 1 Tablespoon Coconut Cream to coat the inside of the glass⁣
