    Friends, can you believe that Halloween is right around the corner? It feels as if time has moved so quickly, and now my boys’ favorite holiday will be here in the blink of an eye. While I do enjoy Halloween, it’s not my favorite holiday (I’m more of a Christmas gal!) so when it comes around every year, I usually turn my focus towards making sure that my boys have the best holiday possible. Which means, getting their costumes prepared and making them delicious and healthy holiday treats.

    While I believe in the benefits of living a healthy lifestyle, I also believe that part of living that so-called healthy lifestyle is making room for ALL foods to have their time and place. Which means that I allow my kids to eat traditional candy on Halloween. Let’s be honest, kids deserve to be kids, which means enjoying the candies that we know and loved growing up, too!

    But because I don’t want my kids to be eating Halloween candy all the time, especially in the weeks leading up to Halloween, I love coming upon new festive and fun treats that are both delicious and healthy. So when my good friend Melissa of Melissa’s Healthy Kitchen posted this recipe, the other day, I knew that I needed to make my own version! These sweet little chocolate pumpkins are made with just four ingredients, and are a deliciously healthy take on the classic Reese’s Peanut Butter Pumpkins! But the good news is, these don’t need to just be for Halloween. You can use mini muffin liners to make them into bite-sized peanut butter cups that can be enjoyed all year long!

    To make these pumpkins, you will need chocolate chips, coconut oil, creamy peanut butter, and water.

    Melt the chocolate and coconut oil in a small bowl, then pour the melted chocolate into the pumpkin molds, filling each cavity about 1/4 of the way full.

    4 Ingredients Needed to Make These Healthy Chocolates

    If you’ve ever read the packaging on a Reese’s Peanut Butter Cup, then you’ll know that the ingredients list is a mile long. Luckily, that isn’t the case for this recipe! These delectable pumpkins are made from just four simple ingredients, which makes this the perfect halloween treat to make in a pinch.

    • Chocolate Chips: To make the creamy chocolate part of these peanut butter pumpkins, you’ll need melted chocolate! I like using chocolate chips for this. My absolute favorite chocolate chips are by Hu Kitchen, and you can use code KALEJUNKIE to get 15% off your order!
    • Coconut Oil: A little coconut oil will help the chocolate melt into a rich, creamy consistency.
    • Powdered Peanut Butter: The reason I recommend powdered peanut butter here is because you can really control the consistency of it, making the peanut butter perfectly smooth and creamy. However, if you’d rather use regular peanut butter, that is completely okay! Just make sure that it’s really creamy, and perhaps even a little liquid-y.
    • Water: If you’re using powdered peanut butter, then a little water is essential for making that creamy peanut butter consistency that brings these pumpkins to life.

    Next, prepare the peanut butter and pour it into the molds, filling them the remaining 3/4 of the way full.

    How to Make This Better-For-You Halloween Treat

    To make these bite-sized chocolates, start by adding the chocolate chips and coconut oil to a small bowl. Melt them in the microwave in 2-3, 30 second increments, until they’re fully melted. Be sure to stir them together between increments so that they are fully combined.

    Next, pour the melted chocolate into the pumpkin molds, filling them only about 1/4 of the way. There will be chocolate left over, which is what you want! Once the cavities are filled, place the molds into the freezer for 10 minutes, to allow the chocolate to set.

    Finally, pour the remaining chocolate into the cavities, filling them to the top. Then, allow the chocolates to freeze for a minimum of one hour, until the chocolate sets. Then, serve and enjoy!

    While the chocolate is setting, prepare the peanut butter filling. If using peanut butter powder, add it to a bowl alongside the water and stir until a creamy peanut butter forms. Next, remove the molds from the freezer and fill the cavities the remaining 3/4 of the way with the creamy peanut butter.

    Fnally, pour the remaining chocolate into each of the cavities, filling them to the top. Once the molds are filled, place them back in the freezer for a minimum of one hour, until the chocolate sets. When they’re done, remove them from the freezer, pop them out of the molds, and enjoy! Store any leftovers in an airtight container, in the fridge, for up to one week.

    • 1 Pumpkin Chocolate Mold these molds are perfect for bringing your bite-sized pumpkins to life!

    Ingredients

    • 1 ½ Cups Chocolate Chips
