I wanted a lunch that felt indulgent but was actually doing some heavy lifting nutritionally, and swapping traditional mayo-heavy dressing for a blended cottage cheese base turned out to be the way to go. It’s creamy, tangy from the pickle brine, and you would never guess it’s built on cottage cheese instead of mayo.
The dill pickles are non-negotiable here — I used Grillo’s but you can use whatever you prefer, and the sharp, briny crunch they add is what makes this taste like something more than your average chicken salad recipe. Combined with fresh dill and a little red onion, every bite has that punchy, tangy flavor that pairs so well with shredded chicken. And don’t skip making the pita chips from scratch — I used Cut Da Carb pita bread to keep things lower in carbs, and tossing them in olive oil and seasonings before baking makes them so much better than anything store-bought. If you want to keep this recipe gluten-free, just make sure to use a gluten-free pita bread or your favorite gluten-free crackers.

How to Make This High Protein Dill Pickle Chicken Salad
To make this chicken salad, start by making the pita chips. Preheat your oven to 400°F. Cut the pita bread into even-sized pieces and add them to a bowl. In a separate small bowl, mix together the olive oil, oregano, garlic powder, and kosher salt, then pour it over the pita pieces and toss well to coat. Spread the pieces out in a single layer on a baking sheet and bake for 8 to 12 minutes, flipping halfway through, until golden and crisp. Remove from the oven and let them harden and cool as you prepare the rest of the recipe.
Next, make the chicken salad base. Add the shredded chicken, diced celery, diced red onion, diced dill pickles, and chopped fresh dill to a large bowl and set aside.
