    MINI SWEET POTATO TOASTS - INGREDIENTSFOR THE TOASTS:2 medium sweet potatoes1 teaspoon cinnamon1 teaspoon avocado oilFOR THE CHIA JAM WITH COLLAGEN:1 cup raspberries1 scoop Ancient Nutrition Multi Collagen Protein1/4 cup chia seeds1 teaspoon waterFOR THE MIDDLE:1/2 cup peanut butter (or nut butter to taste for paleo)

    MINI SWEET POTATO TOASTS WITH COLLAGEN RASPBERRY JAM

    Ingredients

    FOR THE TOASTS:
    • 2 medium sweet potatoes
    • 1 tsp cinnamon
    • 1 tsp avocado oil
    FOR THE CHIA JAM WITH COLLAGEN:
    • 1 cup raspberries
    • 1 scoop Ancient Nutrition Multi Collagen Protein
    • ¼ cup chia seeds
    • 1 tsp water
    FOR THE MIDDLE:
    • ½ cup peanut butter (or nut butter to taste for paleo)

    Instructions 

    1. Preheat oven to 400. 
    2. Wash and scrub sweet potatoes and slice into 1/2 inch thick pieces. 
    3. Add them to a medium bowl, and toss with cinnamon and avocado oil. 
    4. Line them up in a single layer. 
    5. Place tray in the oven for 25 minutes, flipping once at the half way point, then remove from oven. 
    6. While the potatoes are in the oven, make the jam.
    7. In a small pot over low heat, add the raspberries, collagen, water and chia seeds. 
    8. Mash together and stir for about 5 minutes and then remove from the heat to allow to thicken. 
    9. Top the sweet potato slices with peanut butter and then Collagen Raspberry Chia Jam. 
    10. ENJOY!!!
