    Classic celebration cake with a side of protein?! Say no more. These No-Bake Celebration Bites taste JUST like a classic vanilla birthday cake that you know and love, but have an ample amount of protein to keep you full and satisfied. Plus, they are also gluten-free, grain-free, and raw, and vegan-optional, so they are truly the perfect treat for anyone!

    Let’s be honest: there are few things in life that are more delicious than a traditional birthday celebration cake. I’m talking a yellow sponge cake, with buttercream frosting and all of those delicious rainbow sprinkles. Sometimes, a craving for birthday cake strikes, but with the time and effort it takes to make a birthday cake, it feels a little ridiculous just to make one for no reason. Like always, I knew there had to be a better way… and in that search for a better way, my No-Bake Celebration Cake Bites were born.

    These rich, creamy protein-packed bites are perfect for satisfying your cake cravings. The bites themselves have that perfect birthday cake-like flavor, and with the coating of rainbow sprinkles, they have that nostalgic taste that you know and love.

    Plus, as I mentioned earlier, these bites are loaded with protein, but there’s a catch: you won’t find any protein powder in this recipe. Instead, these bites get their protein from collagen peptides, which are flavorless, texture-less, and are packed with healthy protein. If you wanted to make this recipe vegan or vegetarian-friendly, you could use a vegan protein powder in its place. However, I strongly recommend the collagen peptides, because they have the most neutral flavor. It’s why I use them in my Life Changing Tahini Chocolate Chip Cookies – you would never guess that these chewy, chocolate chip cookies were packed with protein!

    And if you’re looking for more ways to get some extra protein in, then my Lemon-Blueberry Protein Breakfast Bites are the perfect recipe for you. I love to prepare a batch of them, alongside these No Bake Celebration Bites, at the start of every week, so that I always have a protein-packed snack on-hand!

    All of the ingredients needed to make the no-bake celebration bites: cashews, salt, almond flour, non-dairy milk, sprinkles, coconut sugar, collagen powder, olive oil, and vanilla extract

    What You Need to Make These No-Bake Celebration Cake Bites

    • Cashews: Raw cashews form the base for this recipe, and I highly recommend sticking to them! Not only are cashews absolutely delicious, but they give these bites the perfect, creamy texture.
    • Coconut Flour: I love coconut flour because it’s light and fine, making it perfect for a no-bake recipe like this. Whenever a recipe is no-bake, you want to make sure that it doesn’t end up becoming too dense, so for this recipe, coconut flour is perfect.
    • Coconut Sugar: To keep this recipe on the lighter side, we’re using coconut sugar. I love coconut sugar because it’s perfectly sweet, yet free of refined sugars, so it’s a bit healthier than traditional cane sugar!
    • Collagen Peptides: Like I mentioned earlier, I love collagen peptides for a boost of protein without the grittiness of protein powder.
    • Almond Milk: Any non-dairy milk will work well in this recipe, but I personally love almond milk.
    • Vanilla Extract: Vanilla extract is an essential ingredient in any dessert or sweet treat. Don’t skip this!
    • Almond Extract: I love using almond extract in my cookies and baked goods, because it delivers that “fresh from the bakery” flavor right from home!
    • Sea Salt: A sprinkle of fresh sea salt helps to balance out the sweetness.
    • Rainbow Sprinkles: And, of course, these bites are way more fun with rainbow sprinkles! I just use traditional rainbow sprinkles that I get off of Amazon.

    How to Make These Protein-Packed Bites

    To make my No-Bake Celebration Cake Bites, it’s as simple as adding all of your ingredients to a food processor, and processing them until they form a smooth dough. Then, simply scoop the dough out, roll into 12-15 bite-sized balls, and freeze them for approximately 30 minutes, or until they’re solid. It’s truly so easy!

    Ingredients

    • 1 ½ Cups Raw Cashews
    • 3 Tablespoons Coconut Flour
    • ¼ Cup Coconut Sugar
    • ¼ Cup Collagen Peptides
    • 2 Tablespoons Almond Milk
    • 2 Teaspoons Vanilla Extract
    • 1 Teaspoon Almond Extract
    • 1 Pinch Sea Salt
    • ½ Cup Rainbow Sprinkles

    Instructions 

    1. Start by lining a baking sheet with parchment paper. Set aside.
    2. Add all of your ingredients (minus the sprinkles) to a food processor and pulse until smooth. You can use a rubber spatula to scrape down the sides of the food processor, as needed.
    3. Once you achieve a dough-like consistency, add in 1/4 cup of the rainbow sprinkles and pulse a couple of times.
    4. Using a cookie scoop, scoop some of the dough into your hands and roll it into a ball. Repeat until all of the dough is gone – this should make about 12 to 15 balls.
    5. Then, roll each ball in the remaining sprinkles.
    6. Freeze the balls for 30 minutes so that they harden.
    7. Then, plate and enjoy!
