    Ingredients

    • 1 cup almond butter
    • ¾ cup coconut sugar
    • 1 egg
    • 1 tsp baking soda
    • 1 cup dairy free chocolate chips

    Instructions

    1. Preheat oven to 350.
    2. Line a baking sheet with parchment paper.
    3. In a medium bowl, mix together all the ingredients except the chocolate chips.
    4. Then fold in 1/2 of the chocolate chips.
    5. Use a cookie scoop to form 10 cookies. Make sure to spread them out because the dough spreads in the oven.
    6. Sprinkle remaining chocolate chips on top.
    7. Bake 12-13 minutes.
    8. Remove from oven and let cool.
They will flatten out some more and get a little more crunchy!

Oh my GOD these are good. And so easy! Honestly, I saw the recipe and thought, "pffft there’s no way this will work."

Well, I was wrong, and am now eating my words as I eat my 5th cookie.

I LOVED these cookies, they were simple and delicious! I substituted almond butter for peanut butter because I did not have any almond on hand. Peanut butter adds another layer of deliciousness to these cookies! This is now my go to chocolate chip cookie recipe!! ♥️
