Parmesan Crusted Delicata Squash

One of the most underrated fall flavors, in my opinion, is the deliciousness of roasted delicata squash. It's tender, it's sweet, and pairs perfectly with salty cheese and flavorful herbs. And in my humble opinion, there is no better way to enjoy this perfect fall veggie than by making my Parmesan Crusted Delicata Squash. These tender squash pieces are perfect for snacking, or for serving alongside your favorite protein options, like my Easy Chicken Marsala. Yum!

    One of the most underrated fall flavors, in my opinion, is the deliciousness of roasted delicata squash. It’s tender, it’s sweet, and pairs perfectly with salty cheese and flavorful herbs. And in my humble opinion, there is no better way to enjoy this perfect fall veggie than by making my Parmesan Crusted Delicata Squash. These tender squash pieces are perfect for snacking, or for serving alongside your favorite protein options, like my Easy Chicken Marsala. Yum!

    Friends, we all know that fall is the season of pumpkin and sweet potatoes, but what if I told you that there was an even more delicious fall veggie that is nutrient dense, budget-friendly, and also warm and cozy? Well friends, let me introduce you to the beloved delicata squash. While it arguably doesn’t get as much love as its friend, the butternut squash, delicata squash is just as delicious… and might I say, I may even like it a little better. I know, it’s crazy!

    And while delicata squash itself is delicious, it’s even better when it’s coated with tangy parmesan cheese, flavorful herbs, and baked until it’s nice and crispy in the oven. After all, what doesn’t taste better once it’s baked with parmesan?!

    You can think of this dish as like the elevated, classier big sister to the French fry. It’s perfect to serve as a side dish alongside your favorite burger, salad, or chicken dish!

    What You Need to Make These Upgraded Delicata Squash “Fries”

    8 is the magic number when it comes to this recipe, because all you need are 8 different ingredients to bring it to life!

    • Delicata Squash: Of course, you need a big delicata squash to make this recipe! Delicata squashes are abundant this time of year, and you can usually find them at your local grocery store.
    • Olive Oil: Olive oil adds a delicious touch of healthy fats, and helps the topping stick to the squash.
    • Parmesan Cheese: You can use traditional parmesan cheese, or dairy-free parmesan to make this recipe vegan-friendly.
    • Seasonings: To season these bad boys, we’ll be using a combination of sea salt, black pepper, garlic powder, parsley, and Italian seasoning. Yum!

    How to Make These Delectable Delicata Squash Pieces

    To make these Parmesan Crusted Delicata Squash pieces, start by preheating your oven to 425 F and line a baking sheet with parchment paper. Then, set them aside.

    Next, prepare your delicata squash. Cut the squash into 1/2 inch thick rings, then remove the seeds. Finally, cut them in half again, until they’re in crescent moon shapes. Place your cut squash into a bowl and toss with one tablespoon of olive oil, and in a separate bowl, in a separate bowl, mix together the parmesan cheese, parsley, Italian seasoning, garlic, sea salt, and black pepper. Then, add in the rest of your olive oil and mix until a crumbly texture forms. This will be your topping!

    Finally, use tongs to coat each piece of delicata squash into the topping mixture. Once done, place your coated pieces onto a baking sheet, and repeat until all of your squash is finished.

    Once your squash is all prepared, bake it for 20 minutes, then remove from the oven, cover with foil, and bake for another 5 minutes.

    Remove the foil and bake for one more minute. If you want some additional browning, you can turn on the broiler for this last minute!

    Finally, once your squash is done, serve it immediately and enjoy! Store any leftovers in an airtight container in the fridge for up to three days.

    Ingredients

    • 2 Delicata Squash
    • 3 Tablespoons Olive Oil, divided
    • ½ Cup Grated Parmesan Cheese, or substitute for vegan parmesan
    • ½ Cup Parsley, finely chopped
    • 2 Tablespoons Italian Seasoning
    • 2 Teaspoons Garlic Powder
    • 1 Teaspoon Sea Salt
    • 1 Teaspoon Black Pepper

    Instructions
