    SEA SALT PISTACHIO WALNUT TRUFFLES - INGREDIENTS3/4 cup shelled raw pistachios1 cup raw walnuts10 medjool dates, pitted1 tsp vanilla extract1 tb coconut oil, melted1 tsp cinnamon1 tb cacao powder3/4 cup Enjoy Life Foods mini chocolate chipssea salt flakes for toppingoptional:1 scoop collagen peptides (not vegan)

    I skipped hot yoga yesterday to make them, and it was the best decision I’ve ever made. Because when the recipe inspo hits, you’ve gotta strike while the iron is hot. They are vegan, gluten free, paleo friendly, and sweetened only with dates and Enjoy Life Foods mini chocolate chips.

    Ingredients

    • ¾ cup shelled raw pistachios
    • 1 cup raw walnuts
    • 10 medjool dates, pitted
    • 1 tsp vanilla extract
    • 1 tbsp coconut oil, melted
    • 1 tsp cinnamon
    • 1 tbsp cacao powder
    • ¾ cup Enjoy Life Foods mini chocolate chips
    • sea salt flakes for topping
    • optional: 1 scoop collagen peptides (not vegan)

    Instructions 

    1. In a food processor, pulse 1/4 cup of the pistachios leaving big chunks. This is for the topping.
    2. Pour into a bowl and set aside.
    3. Next pulse the dates until a ball forms.
    4. Add the remaining pistachios, walnuts, vanilla, coconut oil, cinnamon, cacao, and collagen.
    5. Pulse until everything is blended well and you can form balls.
    6. Line a baking sheet with parchment paper.
    7. Form 15 balls.
    8. Freeze for 30 minutes.
    9. Melt chocolate chips in the microwave in 30 second intervals.
    10. Dip each ball in chocolate and immediately top with the crushed pistachios and sprinkle sea salt on top!
