
Ingredients
- 4 fresh peaches, cut into slices (if using frozen peaches, use one 12 oz bag and you need 1 tablespoon arrowroot or corn starch or tapioca flour)
- ¾ cup gluten free flour (or regular flour)
- ½ cup coconut sugar
- 1 tsp baking powder
- ¼ cup vegan butter or regular butter, melted
- 1 tsp sea salt
- ice cream to top
Instructions
- Preheat oven to 350.
- Slice your peaches and add them to a deep pie dish or 8 x 8 baking dish.
- Sprinkle 1/4 cup of the coconut sugar on top and give it a quick toss. NOTE, if you are using frozen peaches, toss the peaches in the arrowroot/corn starch / tapioca flour first, to prevent the peaches from getting too liquidy and creating a thick sauce, then sprinkle the coconut sugar on top.
- In another bowl, add the flour, remaining 1/4 cup coconut sugar, baking powder, melted butter, and sea salt.
- Mix together until a dough forms.
- Add spoonfuls on top of the peaches.
- Bake for 30 minutes.
- Top with ice cream and enjoyyyyyyyy!!!
