Gluten-Free Sugar Cookie Cherry Cobbler (No Added Sugar!)

If you’re looking for a healthier twist on the classic cherry pie, then look no further than my Gluten-Free Sugar Cookie Cherry Cobbler. This cobbler is made from pitted cherries, almond extract, and a delicious, buttery, gluten-free crumble crust that also happens to be refined sugar-free.

Friends, if there’s one dessert that you need at your backyard BBQs, it’s a delicious cherry cobbler. It’s an American classic for a reason! There is nothing I love more than grilling up a juicy burger, serving alongside the perfect side salad, washing it down with a glass of lemonade, and then finishing it off with the perfect cherry cobbler. And this Gluten-Free Sugar Cookie Cherry Cobbler is the only recipe that you’ll need!

This recipe is naturally gluten-free, refined sugar-free, and can easily be made vegan-friendly (just swap out the butter for non-dairy butter or coconut oil) which means that it’s perfect for sharing with a crowd. But, don’t get me wrong: you’ll never know it’s gluten or sugar-free- it tastes that good! Serve it with a heaping scoop of vanilla ice cream, and you’ve got the perfect dessert for those long summer nights.

What You Need to Make This Gluten-Free, Vegan Cobbler

  • Cherries: Of course, it wouldn’t be a cherry cobbler without the cherries! Be sure to pit the cherries according to this method.
  • Gluten-Free All Purpose-Flour: A gluten-free, all-purpose flour is perfect in this recipe. You can also use regular all-purpose flour, if you prefer, but note that it will make this recipe no longer gluten-free.
  • Granulated Monk Fruit Sweetener: In order to keep this recipe refined sugar-free, I like using a granulated monk fruit sweetener, like this one from Lakanto. However, you can also opt to use traditional sugar, here, if you prefer!

  • Vanilla Extract & Almond Extract: Both vanilla extract and almond extract are essential for making this recipe. Don’t skip it!
  • Lemon: A little bit of lemon helps to cut trough the tartness of the cherries and add the best flavor to the filling. I recommend using fresh lemon juice here, if possible.
  • Baking Powder: Baking powder is what keeps this gluten-free cobbler crust light and practically melt-in-your-mouth.
  • Cinnamon: Don’t skip the cinnamon – it adds a delicious flavor to this cobbler.
  • Kosher Salt: A pinch of salt adds the perfect flavor to this cobbler.
  • Butter: I recommend using unsalted butter in this recipe. You can use dairy butter or non-dairy butter, in this recipe, or you can even use coconut oil. This recipe has been tested with all of the above, and they all work well!

Next, prepare the crumble topping. Add the crumble topping ingredients (the granulated monk fruit sweetener, gluten-free flour, baking powder, cinnamon, vanilla extract, almond extract, kosher salt, and melted unsalted butter) and mix them together well.

The Easiest Way to Pit Cherries

In order to prepare the cherries for this recipe, you’ll want to remove the pits from them. Cherry pits can be highly toxic, so removing the pits is essential!

This is my hack for easily pitting cherries, and you won’t want to pit them any other way! Simply use a metal straw to push out the pits and then chop the cherries as desired. It’s that simple and easy!

How to Make This Perfect Summertime Cherry Cobbler

To make this cobbler, start by preparing the cherries. Pit the cherries according to this method and add them to a large bowl. Next, preheat your oven to 350 F. Add the flour, monk fruit sweetener, vanilla extract, almond extract, and lemon juice to the bowl with the cherries and stir to coat the cherries well. Then, transfer the cherries to an 8×8 baking dish.

Next, prepare the crumble topping. Add the crumble topping ingredients (the granulated monk fruit sweetener, gluten-free flour, baking powder, cinnamon, vanilla extract, almond extract, kosher salt, and melted unsalted butter) and mix them together well. The mixture will look similar to a sugar cookie dough! Scoop the mixture into the baking dish, until it fully covers the cherries.

Transfer the baking dish to the oven and allow it to bake for 35 minutes, until the cherries are bubbling around the edges and the crumble topping is golden. Once it’s done baking, remove the dish from the oven and allow it to cool for 10 minutes. Once it’s cool, serve it with a big scoop of vanilla ice cream, then serve and enjoy!
