    Friends, if there is one recipe that makes me wonder why I haven’t been making it for my entire life, it’s this one. I love a good crispy egg, and paired with feta cheese, arugula, and avocado in a warm tortilla? It’s too good. And, it only takes a few minutes to whip up, so it’s perfect for those days where you’re rushing to make breakfast (or lunch) but don’t want to make a smoothie. This recipe truly has it all: ease, simplicity, and sustenance.

    The recipe for this crispy feta egg recently went viral, thanks to the creator, Grace Elkus. And as soon as I tried it for myself, I knew why. The crispy feta ring surrounded by a perfectly runny egg is an explosion of flavors in your mouth. And, not to mention, is a perfectly healthy and delicious breakfast that also feels indulgent at the same time. Believe me when I say that you should run to your kitchen, right now, and go make it!

    But, if this egg wasn’t good enough on its own, we’re making it even better by turning it into a healthy breakfast taco that’s filled with peppery arugula and mashed avocado. My mouth is watering just thinking about it!

    To make this egg, you will need feta cheese, an egg, a tortilla, avocado arugula, and seasonings.

    Start by crumbling the feta cheese and adding it to a hot pan, in a ring shape. Next, crack an egg inside of the cheese and allow it to cook.

    The Only 6 Ingredients You Need to Make This Recipe

    • Eggs: Eggs are true superfoods, classic breakfast staples, and are essential for this recipe! Eggs are always made better with cheese, and the combination of eggs and feta is too good to pass up.
    • Feta: Of course, these wouldn’t be feta eggs without the feta cheese! I recommend buying feta cheese by the brick, NOT pre-crumbled feta. When feta cheese is packaged by the brick, it is often accompanied by a brine that keeps the feta fresh and moist. Pre-crumbled feta cheese, in my opinion, can get dry very quickly, which we don’t want for this recipe.
    • Seasonings: The only seasonings you’ll need for this recipe are black pepper and crushed red pepper flakes. I don’t recommend adding in sea salt, as the feta cheese is salty enough.
    • Avocado: Avocados are full of healthy fats, making them the perfect ingredient for breakfast. If you love a classic avocado toast, then you will love this recipe!
    • Arugula: Arugula is bright and peppery, which pairs perfectly with the salty feta cheese and crispy eggs.
    • Grain-Free Tortillas: To make these Crispy Feta Fried Eggs into tacos (which, if you ask me, is the BEST way to serve them), we’ll need a couple of grain-free tortillas. My favorite grain-free tortillas are by Siete.

    How to Make This Viral Breakfast in Under 10 Minutes

    To make this Crispy Feta Fried Egg, start by heating a nonstick pan, on the stove, over medium heat. While the pan is heating up, crumble the feta cheese by placing the brick of feta into a bowl and using a fork to break it into small chunks. Once the pan is hot, add in the crumbled feta cheese in a circular shape.

    Next, crack an egg into the center of the feta cheese ring and season with black pepper and crushed red pepper flakes. I recommend skipping the salt, as the feta cheese is already salty! Allow the egg to cook until the edges are nice and crispy – this should take approximately 2-5 minutes.

    While the egg is cooking, prepare the breakfast taco. Warm the tortilla on the stove, over an open flame, until it’s soft and pliable. Next, mash the avocado and spread it across the tortilla. Add the arugula to a small bowl and toss it with olive oil and lemon juice. Then, place it on top of the tortilla.

    Finally, once the egg is done, remove it from the pan and add it to the tortilla. Serve immediately, and enjoy!

    While the egg is cooking, prepare the tortilla by warming it on the stove. Top it with mashed avocado and arugula, then add the egg on top for the perfect breakfast taco.

    A Few Notes on Making This Egg Recipe

    While this egg is admittedly simple to prepare, there are a few steps to take to ensure that it turns out perfectly, every time!

    • Use a nonstick pan: I tested this recipe with several different pans, and found that above all, a nonstick pan worked best. When I tried to make this egg in other pans, including a cast iron, the cheese stuck to the pan and ended up breaking the egg. Which is not what we want!
    • Be careful not to burn the cheese: If the pan gets too hot, the feta can easily be burn. I recommend cooking this egg on medium heat, in order to avoid burning it. And, watch it carefully!
    • Make what you’ll eat right away: Crispy eggs do not keep well over time, so I highly recommend making what you’ll eat right away, while it’s hot and fresh. Because this recipe is so simple, it’s super easy to whip up whenever the craving strikes!

    • 1 Nonstick pan A good nonstick pan is essential for this recipe. I love this one!

    Ingredients

    • ⅓ Cup Feta, crumbled
    • 1 Egg
    • ¼ Teaspoon Black Pepper

    • ½ Avocado, mashed
    • 1 Cup Arugula, tossed in lemon juice and olive oil
