If you loved the classic Cottage Cheese Flatbread that made its way onto the blog (and TikTok) a few weeks back, then you will absolutely adore this spinach version! Not only does it come out a beautiful green color, but it’s the perfect way to sneak in an extra serving of veggies! I love making these flatbreads for my boys, for their lunch boxes, and filling them with turkey and cheese, so they have a delicious, protein-packed sandwich to keep them full.

But, this flatbread isn’t just limited to sandwiches – you can easily turn it into a healthy pizza crust (loaded with tomato sauce, cheese, and pepperoni) or serve it alongside a creamy soup in place of traditional bread! This flatbread is so versatile and easy – it will become your new favorite pantry staple!

Top-down view of various ingredients for a meal on a kitchen counter. Includes sliced tomatoes, pickled onions, grilled chicken, romaine lettuce, cottage cheese, eggs, garlic, bread, shredded cheese, sour cream, salt, and dried herbs on small plates and bowls.
To make this flatbread, you will need cottage cheese, eggs, spinach, parmesan cheese, garlic, and Italian seasoning.
A food processor filled with spinach, cracked eggs, shredded cheese, garlic, and seasoning. Surrounding it are various bowls containing cottage cheese, salt, herbs, garlic cloves, pepper, and a plate with egg shells and grated cheese. The background is a tiled surface.
Add all of the ingredients into a food processor or blender – the cottage cheese, eggs, spinach, parmesan cheese, garlic, and Italian seasoning – and process or blend until smooth.

The 6 Ingredients Needed to Make These Flatbreads

    • 🥣 Cottage Cheese: Of course, the key to making this Cottage Cheese Flatbread is… cottage cheese! Cottage cheese is perfectly creamy and packed with protein, and is the perfect base for this flatbread. I highly recommend using the Good Culture cottage cheese – it’s my favorite!
    • 🥬 Spinach: Spinach is loaded with vitamins and minerals, and packs this recipe full of veggies. This is perfect if you’re making it for picky kids who refuse to eat their vegetables. They won’t even taste the spinach!
    • 🥚 Eggs: Eggs help to hold this flatbread together, and ensure that it gets nice and fluffy.
    • 🧀 Parmesan Cheese: A touch of parmesan cheese adds a delicious, salty flavor and just the right amount of cheesy-ness.
    • Garlic: I always recommend using fresh garlic, whenever possible. The flavor is truly unbeatable!
    • 🧂 Italian Seasoning: A pinch of Italian seasoning adds the best flavor to this flatbread.

Once the batter has formed, transfer it to the parchment-lined baking sheet and use a rubber spatula to spread it out into a thin layer. Bake for 30-35 minutes, or until the top has set and browned, then serve and enjoy!

How to Make This Simple & Easy Veggie Cottage Cheese Flatbread

To make this flatbread, start by preheating your oven to 350 F. Next, line a baking sheet with parchment paper and set it aside. Then, add all of the ingredients into a food processor or blender – the cottage cheese, spinach, eggs, parmesan cheese, garlic, and Italian seasoning – and process or blend until smooth. This should take approximately 45 seconds to 1 minute.

Once the batter has formed, transfer it to the parchment-lined baking sheet and use a rubber spatula to spread it out into a thin layer. Transfer the tray to the oven and allow it to bake for 30-35 minutes, or until the top has set and browned.

Once it’s done, remove it from the oven and allow the flatbread to cool completely before removing it from the parchment paper. Finally, fill with your favorite toppings or ingredients, then serve and enjoy!

This recipe is easy & delicious. In the middle of baking I sprinkled Everything bagel, put it back in. I never used this but it was in my seasoning cabinet. Game changer. Made 2 turkey sandwiches with this recipe. Some slices left over to share with friends. Yummy 😋 I will try this without the spinach next time.

Loved this recipe for some great ideas. Added some diced mushrooms, fresh chives from the garden, flaxseed meal and sage, with young manchego sheep cheese instead and used a smaller baking sheet with shallow edges for a thicker flat bread. Then had some diced ham and kamala olives with a spinach cream cheese/sour cream spread for a yummy sandwich.

Does the flatbread need to be refrigerated?
