@kalejunkie ✨ AIR FRYER SALMON RICE PAPER WRAPS! One thing about me, salmon is my favorite fish and since I eat everything I share, you get a salmon recipe again :) These rice wraps are so fun and easy to make and sort of have vibes of a baked salmon sushi roll but wrapped in a crispy rice paper wrap. And what takes this to the next level is the tangy dipping sauce which I cannot live without!

Makes 4 servings (2 each)
1 lb salmon, cubed into tiny pieces
2 tb kewpie mayo
3 tb low sodium soy sauce
2 tb sriracha (@yellowbirdsauce)
2 tb rice vinegar
1 tb toasted sesame oil (@latourangelle)
3 green onions, sliced
1 tb arrowroot or corn starch
8 pieces nori seaweed paper (@gimmeseaweed)
16 rice paper wraps

Dipping sauce:
1/2 cup low sodium soy sauce
2 tb rice wine vinegar
2 tsp sesame oil
2 garlic cloves, mashed
1 tb grated/minced ginger
2 tsp sriracha 1 green onion, thinly sliced 2 tsp sesame seeds

Make dipping sauce. Add all ingredients to a small bowl and set aside. Chop salmon into small pieces and add to a large bowl, along with the mayo, soy sauce, vinegar, sesame oil, and sriracha. Mix and coat salmon well then add the green onions and arrowroot/cornstarch, mixing again. Line up rice papers on the counter. Use spray bottle (or other method) to dampen. Add a one piece of nori in the center of each one, followed by 2-3 tb of salmon mixture to each one then GENTLY fold as shown so they don’t tear. *I did double wrap them for more crunch, but that’s optional. Air fry at 400F for 10 minutes, then flip them over and air fry for 4-5 minutes more. Serve with dipping sauce and enjoy!

FOLLOW @kalejunkie for fun, easy recipes!🍌 CARAMELIZED BANANA ICED LATTE ☕️ If you have a banana, go make this stat! It’s such an easy way to use a banana and elevate your coffee game!

1 tsp butter
1 banana, sliced
1/2 tsp cinnamon
1 tb coconut sugar
1 cup milk of choice (I used almond)
8 oz cold brew or 2 shots espresso
Ice

Melt butter in a pan over medium heat. Add banana slices, cinnamon, and sugar. Cook for about 4-5 minutes pr until the bananas have caramelized. Remove from heat. Next, make the banana milk. Add the milk and caramelized banana mixture to a blender and blend until smooth. If your mixture is completely smooth, there is no need to strain the milk. If there are any chunks, just strain it. Finally, make your latte. Add ice to a glass, followed by the cold brew or espresso. Pour the banana milk on top, stir and enjoy!

@kalejunkie ✨ SALMON CAESAR SOFT TACOS with high protein caesar dressing that’s so good, you’ll want to drink it, I promise :)! Spring time means lighter, quicker meals, so enter my fav salmon tacos! The salmon is broiled in the oven in 9 minutes and the salad comes together in 10, making this the perfect 20 minute dinner that everyone will love.

Makes 4 servings
1 lb salmon
1 tsp garlic powder
1 tsp onion powder
1/2 tsp kosher salt
1 tsp ground black pepper
1 tb avocado oil
8 flour tortillas, warmed

2 heads romaine lettuce, chopped
3/4 cup parmesan cheese, freshly grated
1/3 cup garlic croutons, crushed

High protein caesar dressing
1 cup greek yogurt
1 tb dijon mustard
2 tsp Worcestershire sauce
1 lemon, juiced
3/4 cup parmesan cheese, freshly grated
1/2 tsp kosher salt
1/2 tsp ground black pepper

Turn on broiler to high. Line a baking sheet with foil or parchment paper. If using parchment paper, make sure the parchment paper is not much bigger than the fish or the paper will burn under the broiler :) Add salmon to the foil/parchment. Season with garlic powder, onion powder, salt and pepper. Rub lightly with avocado oil. Place the salmon in the oven under the broiler for 9-11 minutes. I like my salmon rare-ish, so 9 minutes is perfect for me, but keep it in there until your desired doneness. Remove from oven, shred the salmon with two forks and set aside. Prepare the dressing. Add all ingredients to a small blender and blend until smooth. Taste and adjust seasonings as needed. Next, make the salad. Add chopped lettuce, parmesan and croutons to a large bowl. Toss with the dressing. Finally, assemble tacos. Lay out the warmed tortillas, then add the salmon, followed by a generous amount of the salad. Fold up like a taco and enjoy!

@kalejunkie KITCHEN REVEAL, finally. Remodeling a kitchen while you are living in the space was no easy feat! The boys and I made a makeshift kitchen in the living room for a few months. We used a microwave to warm food, washed dishes in the laundry room sink and did a whole lot of takeout. I filmed my cooking videos in my friends kitchen to keep my business afloat (ty @christinecalegari!). But we did it—it’s not fully done and there are still things I want to change, but it is a BIG improvement from what I started with! Have any questions? Ask away!

@kalejunkie ✨ CRUNCHY RICE SPICY TUNA BOWLS, perfect for nights you want an easy, low effort meal that has all the sushi vibes…but it’s made with canned tuna instead 😏. If you aren’t a canned tuna person, I think this recipe might just change your mind, especially paired with crunchy rice for fun texture :) I love how this bowl turned out and I know you will love it too!

Makes 4 servings
SPICY TUNA
2 cans tuna (albacore tuna, packed in olive oil)
1/4 cup low sodium soy sauce
3 tb kewpie mayo
2 tb sriracha
1 tb toasted sesame oil
3 tb rice vinegar

CRUNCHY RICE
1 1/2 cups cooked sushi rice
2 tb avocado oil
2 tsp chili crisp (I used momofuku but TJ’s makes it too) - optional

BOWLS
1 cup shelled edamame
1 avocado, chopped
1 bunch green onions (7ish onions), sliced thin
4 small packages seaweed (I’m using @gimmeseaweed)
2 tsp chili crisp
3 tb sesame seeds

First, cook rice and set aside. Next, make the tuna mixture. Drain most of the oil from the cans of tuna and transfer the tuna to a medium bowl. Add soy sauce, mayo, sriracha, sesame oil and vinegar. Mix everything well, making sure to break the tuna down into tiny pieces. Then make the crunchy rice. Add avocado oil to a medium skillet. Once the skillet is hot, add the cooked rice, using a spatula to press it down. Let it cook on for about five minutes, so the bottom gets golden and crunchy. Actually chili crisp on top, if desired. After about five minutes, flip the rice to the other side and let it cook undisturbed for another four minutes or so. Once the crunchy rice is done, build your bowl—crunchy rice, tuna mixture, edamame, green onion, sesame seeds, and seaweed. For extra spice, drizzle on some more chili crisp. ENJOY!

Until recently I didn’t like working with rice paper bc they get soggy fast. Then I discovered the spray bottle method; they take a bit longer to soften which allows you to take your time building the wraps. The possibilities are endless!

1/3 cup low sodium soy sauce
1/4 cup hoisin sauce
2 tb rice vinegar
2 tb toasted sesame oil
1 tb ground ginger
1/2 cup creamy cashew butter
3 tsp sriracha
1 lb ground chicken
1 cup mushrooms, chopped
1 cup shredded carrots
1 cup shredded cabbage
3 green onions, sliced
16 rice paper wraps
3 tb avocado oil

Dipping sauce:
1/2 cup low sodium soy sauce
2 tb rice wine vinegar
2 tsp sesame oil
2 garlic cloves, mashed
1 tb grated/minced ginger
2 tsp sriracha 1 green onion, thinly sliced 2 tsp sesame seeds

Make dipping sauce. Add all ingredients to a small bowl and set aside. Next, in a blender, add the soy sauce, vinegar, sesame oil, ginger, cashew butter and sriracha. Blend until smooth. Head a skillet on medium high heat and add 1 tb avocado oil if desired. Add chicken and break apart into small pieces, then add cabbage, carrots and mushrooms. Continue cooking and pour the sauce in. Cook 5-6 more minutes until the carrots/cabbage have softened. Line up rice papers on the counter. Use spray bottle (or other method) to dampen. Add a 2-3 tb of meat mixture to each one then gently fold as shown. *I did double wrap them for more crunch, but that’s optional. Heat skillet with avocado oil over medium heat. Working in groups, add the wraps. Cook 3ish min on each side until crispy and golden brown. Serve with dipping sauce and enjoy!
