This super-quick homemade cashew milk requires no soaking and no straining through a nut milk bag. Literally all you need is a blender and some pantry staples and you’ve made the creamiest, coziest plant-based milk you’ll make all season. And, you know exactly what went in it.

    Friends, I’ve made a lot of homemade nut milk over the years, and this cashew version is the one I keep coming back to every fall. The trick is using raw cashews instead of almonds, since they’re naturally soft enough to blend completely smooth. No soaking required and no straining required. All you need is cashews, water, and whatever flavors you’re in the mood for.

    This time, I went with pumpkin. It’s warm, it’s spiced, and it tastes like something you’d pay $7 for at a coffee shop, except it takes about a minute to make and costs a fraction of the price. I also love that there’s nothing hiding in this milk that I can’t pronounce. No gums, stabilizers, or weird aftertaste. It’s just real ingredients that actually make me feel good after I drink it.

    It also happens to be one of those recipes that gets better with a little planning ahead. Blend up a batch, pour it into a jar, and you’ve got creamy pumpkin milk ready to go for your coffee, oats, or smoothies for the next several days without touching the blender again.
