10-Minute Armenian Cucumber & Tomato Salad

My 10-Minute Armenian Cucumber & Tomato Salad is a light, simple, and refreshing dish that only takes a few minutes to whip up, but can be enjoyed and savored throughout the week. It’s the best! Plus, this recipe also happens to be gluten-free, dairy-free, and vegan-friendly, making it the perfect dish for everyone to enjoy!

Friends, if you’ve been to my blog before, then you may know that some of my FAVORITE recipes to create and share, aside from my beloved cookie recipes, of course, are my Armenian recipes. My Armenian heritage is super special to me, and is something that I am so proud of! I could not be more proud to be first-generation Armenian-America. In fact, in my upcoming cookbook, LOVE TO EAT, I’ll be sharing a slew of my favorite Armenian recipes with you all, and I can’t wait!

But in the meantime, while you wait to make some of my new favorite recipes from LOVE TO EAT, you can make this salad! This recipe truly comes together in about 10 minutes, making it simple, easy, and flavorful. So, what are you waiting for? Run to your kitchen and make this salad ASAP!

What You Need to Make This Simple & Delicious Armenian Salad

You need less than 10 ingredients to make this delicious salad, making it super easy to throw together!

  • Cucumbers: To make a cucumber & tomato salad, you most certainly need cucumbers! I like using Persian cucumbers because they’re smaller and crunchier, but you can use traditional English cucumbers, too!
  • Tomatoes: Of course, you need tomatoes to make this recipe! Any type of tomato will do, but I usually use cherry or grape tomatoes.
  • Mint: When it comes to Middle Eastern / Armenian cooking, mint is an absolute essential ingredient.
  • Green Onions: Fresh green onions are absolutely essential here. Don’t skip these!
  • Italian Parsley: Parsley adds brightness to this salad, and an herbaceous flavor that can’t be beat!
  • Olive Oil: Olive oil is my favorite oil to use, in dressings or otherwise. It adds a serving of heart-healthy fats, and tastes absolutely delicious in this recipe!
  • Lemon: A squeeze of fresh lemon juice adds brightness and acidity to this dressing. Don’t skip it!
  • Salt: A pinch of sea salt is necessary in any good salad recipe!
  • Sumac: If you haven’t tried sumac yet, then you absolutely need to! Sumac is a member of the cashew family, and has a tart, lemony flavor that is absolutely addictive. Plus, it’s fairly high in antioxidants as well! You can find sumac at most natural grocery stores, as well as in Middle Eastern markets.

What to Serve This Vibrant, Fresh Salad With

Traditionally, this salad is served with bread (aka “Hatz“) and cheese, or with a heartier dish like kebabs and rice. Or, you can totally opt to eat this salad on its own, as it’s filling and delicious as is!

However, if you’e looking for the more traditional experience, I recommend pairing it with my Beef Kofta Kebabs with Tzatziki Sauce for the ultimate Armenian comfort meal! And, if you’re feeing a crowd, or just love a variety of different dishes at dinner time, my Grain Free Tabouleh Salad is a perfect accompaniment!

Looking for something more simple? This recipe also pairs well with my Bulgur Salad (aka “Eech“) or my Rice Pilaf. Whichever way you decide to serve it, you truly can’t go wrong!

How to Make This Nostalgic Armenian Salad

Making this salad could not be any easier! Simply start by chopping and preparing your veggies and herbs, and add them to a large bowl.

Then, add in your wet ingredients and toss to coat well. Once done, serve immediately, or store any leftovers in an airtight container in the fridge for up to five days. Enjoy!

Ingredients

  • 2 Cucumbers peeled and diced
  • 1 Cup Cherry Tomatoes halved
  • 1 Bunch Mint
  • 1 Bunch Green Onions both whites and greens, chopped
  • 1 Cup Italian Parsley chopped
  • Cup Olive Oil
  • 1 Lemon juiced
  • 1 Teaspoon Sea Salt
  • 2 Tablespoons Sumac

Instructions

  • Start by chopping all of your veggies and herbs, and adding them to a large bowl.
  • Next, add in your wet ingredients and toss to fully combine.
  • Serve your salad immediately, or store any leftovers in an airtight container in the fridge for up to five days. Enjoy!

    A neighbor gave me one of her home-grown Armenian cucumbers, telling me it had a lovely flavor. It was larger than normal cukes. I Googled “Armenian cucumber recipes” and came up with your recipe, which doesn’t in fact call for Armenian cucumbers, I later found out! I decided to make it with the one, adding another small garden cuke. Good thing. Another funny thing: My aging eyes saw 1/2 cup olive oil, and I decided that was too much, so I used 1/3, which turned out to be right measurement after all. I also used a large Meyer lemon from my garden and a smaller amount of kosher salt. Delicious! The process took a lot longer than 10 minutes but was worth the time.
