ARMENIAN RICE PILAF

Ingredients

  • 1 cup vermicelli noodles (or the thinnest you can find. Orzo works too)⁣
  • 1 ½ cups white rice (I use Basmati)⁣
  • 2 tbsp butter (or vegan butter)⁣
  • 3 cups water (or broth of choice)⁣

Instructions

  • Melt butter in a large pot on the stove. 
  • Once melted, add the noodles. 
  • You need to stir for about 3-4 minutes until the noodles turn brown. Just be careful that they don’t burn, so watch it, because it goes from brown to black fast. 
  • Remove from heat. 
  • Add the rice and water/broth and stir (it might sizzle a little!). 
  • Return to the stove, turn heat to low, cover with a lid, and set timer for 20 minutes. 
  • Once done, fluff rice and serve! 
  • Add sea salt to taste. 
  • Enjoy!
