Chewy Chai Cookies

    CHAI CHEWY COOKIES - INGREDIENTS2 1/2 cups almond flour 1/2 cup coconut flour 1/4 cup coconut sugar 1 tsp ginger1 tsp cinnamon1/4 tsp cardamom1/2 tsp salt 1/2 tsp baking soda1/2 tsp vanilla1/2 cup maple syrup1/2 cup melted coconut oil1 egg (or sub flax egg)few tsp coconut sugar for rolling!

    If you like CHAI and you like chewy cookies, then YASSSSSSS, friends, my CHAI CHEWY COOKIES are going to be in your rotation. They are grain free, dairy free, low in sugar, the perfect little anytime treat. Or in my case, I got my booty kicked during my workout this am, came home and ate three. So they make great post workout fuel.

    CHAI CHEWY COOKIES

    Ingredients

    • 2 ½ cups almond flour
    • ½ cup coconut flour
    • ¼ cup coconut sugar
    • 1 tsp ginger
    • 1 tsp cinnamon
    • ¼ tsp cardamom
    • ½ tsp salt
    • ½ tsp baking soda
    • ½ tsp vanilla
    • ½ cup maple syrup
    • ½ cup melted coconut oil
    • 1 gg (or sub flax egg)
    • few tsp coconut sugar for rolling!

    Instructions 

    1. Preheat oven to 350. 
    2. Line baking sheet with parchment paper. 
    3. In a medium bowl, mix the dry ingredients together. 
    4. In a small bowl, whisk the wet ingredients together. 
    5. Pour wet ingredients into dry and combine well. 
    6. Refrigerate the dough for at least 30 min to harden. 
    7. Use cookie scoop and form 16 cookies. Using your hand, press each cookie down, they won’t spread while baking. 
    8. Sprinkle each one with coconut sugar.
    9. Bake for 9-10 minutes. 
    10. Remove from oven and EAT.

      Hi! These look amazing! I just wanted to double-check … 3 cups of flour really accurate? Just seems like a lot for only 16 cookies! Either way, yum, but wanted to make sure :). Thanks!

      I followed the recipe exactly (except forgot to sprinkle sugar on top and used applesauce instead of coconut oil) and they are AMAZING!!!! I’ve already made them three times.
