    Friends, do you ever just wish that you had a sweet treat that you could whip up in a few minutes? I know I do. While I love to bake, and often keep baked goods in my freezer at all times (like my famous Life Changing Tahini Chocolate Chip Cookies), sometimes, I just want something a little different; something that feels lighter than a cookie, but has the sweet, chocolatey flavors that I love. The solution to that craving? This delicious bark!

    Bark recipes have become some of my favorite to make (and create!) over this past year, because they are simple, easy, nutritious, and delicious. In fact, bark recipes can really be thrown together with whatever ingredients you love – from pretzels, to granola, to almonds. But this combination of chocolate, pomegranate arils, and walnuts may just be my new favorite. And, it’s perfect for the holiday season!

    This is a great, sweet, healthy snack for anytime of day, or also a great dessert to serve at your holiday parties. When it comes to this bark, the opportunities are truly endless!

    What You Need to Make This Holiday Bark Recipe

    All you need are 5 ingredients to bring this bark recipe to life! What could be better or easier than that?!

    • Chocolate or Dark Chocolate Chips:
    • Coconut Oil: Coconut oil will help the chocolate melt into the smooth, creamy consistency that we need for this bark!
    • Pomegranate Arils: In my opinion, pomegranate arils (aka, pomegranate seeds) are severely underrated. Not only are they loaded with antioxidants and fiber, but they also are bursting with flavor!
    • Walnuts: Chopped walnuts not only add the perfect dose of healthy fats to this recipe, but they add the perfect “crunch!”
    • Flaky Sea Salt: A pinch of flaky salt ensures that this bark doesn’t turn out too sweet.

    How to Make This 30-Minute Bark Recipe

    Bringing this bark recipe to life is so simple and easy! Simply start by adding your chocolate and coconut oil to a large bowl.

    Next, microwave the bowl in 2-3, 30-second increments, until the chocolate is fully melted, being sure to stir in-between. You can also do this over the stove, using the double-boiler method, if preferred.

    Then, add 3/4 of the pomegranate arils and 1/2 of the walnuts to the bowl with the chocolate, reserving the rest for later. Stir until they are fully incorporated with the chocolate.

    Next, line a baking sheet with parchment paper and pour the chocolate on top. Use a spoon to smooth out the chocolate.

    Finally, sprinkle the remaining pomegranate arils and chopped walnuts on top of the chocolate. Place your tray in the freezer for 20 minutes, or until the chocolate has set. Then, once done, remove your bark from the freezer, break into pieces, and enjoy! Store any leftovers in a covered container, in the fridge, for up to one week.

    Ingredients

    • 8 Ounces Chocolate or Dark Chocolate Chips
    • 1 Teaspoon Coconut Oil
    • 1 Cup Fresh Pomegranate Arils

      I made a few of these as presents for people over Christmas and got lovely feedback! I don’t normally eat walnuts but they are the perfect nut to go with the sweet pomegranate. Love making this!
