    GREEK SALAD FLATBREADS - INGREDIENTS6 gluten free flatbread rounds4 cucumbers, diced1 cup tomatoes, halved1/2 cup red onion, chopped3 tablespoons olive oil3 tablespoons champagne vinegar (or red wine vinegar)Salt and pepper to tasteFeta cheese to crumble on topHummus, to spread on the rounds

    GREEK SALAD FLATBREADS

    Ingredients

    • 6 gluten free flatbread rounds
    • 4 cucumbers, diced
    • 1 cup tomatoes, halved
    • ½ cup red onion, chopped
    • 3 tablespoons olive oil
    • 3 tablespoons champagne vinegar, or red wine vinegar
    • Salt and pepper to taste
    • Feta cheese to crumble on top
    • Hummus, to spread on the rounds

    Instructions 

    1. Preheat oven to 350.
    2. Lay the flatbread on a baking sheet.
    3. Toast in the oven for 4-5 minutes.
    4. You can also pop them in the toaster instead.
    5. Next, chop all of the vegetables and put them in a bowl, then toss with olive oil and vinegar, adding salt and pepper to taste.
    6. Spread hummus all over the flat breads, then top with the salad mix.
    7. Add feta cheese and enjoy!
