Ingredients
- 6 gluten free flatbread rounds
- 4 cucumbers, diced
- 1 cup tomatoes, halved
- ½ cup red onion, chopped
- 3 tablespoons olive oil
- 3 tablespoons champagne vinegar, or red wine vinegar
- Salt and pepper to taste
- Feta cheese to crumble on top
- Hummus, to spread on the rounds
Instructions
- Preheat oven to 350.
- Lay the flatbread on a baking sheet.
- Toast in the oven for 4-5 minutes.
- You can also pop them in the toaster instead.
- Next, chop all of the vegetables and put them in a bowl, then toss with olive oil and vinegar, adding salt and pepper to taste.
- Spread hummus all over the flat breads, then top with the salad mix.
- Add feta cheese and enjoy!
