    Friends, I have to tell you. Before my recent trip to Japan, I liked matcha but didn’t love it. It was good, but it wasn’t something I ever really craved. But after experiencing real matcha in Japan, I am fully obsessed. Like, it’s basically my entire personality now. And I knew the moment I got home that I had to recreate it for you.

    The magic of this drink is in the layers. First comes the homemade strawberry syrup, made with just fresh strawberries and monk fruit sweetener. No added sugar, no weird ingredients; just sweet, juicy strawberry flavor. Next comes your milk of choice, and finally, the star of the show: a smooth, frothy ceremonial grade matcha that gives the latte its vibrant green color and earthy taste. When it all comes together, it’s not only gorgeous to look at, but it tastes exactly like the ones I had in Japan.

    One of my favorite parts about this recipe is that while it feels indulgent, it’s actually so much cleaner than anything you’d order at Starbucks. It’s dairy-free (if you choose a non-dairy milk), refined sugar-free, and still has all the flavor you could ever want. Plus, you don’t need any fancy equipment — just a blender and a simple matcha set (although that’s not even necessary). In other words, it’s the kind of recipe that will make you feel like a barista right in your own kitchen.

    • Monk Fruit Sweetener: I love using granulated monk fruit here; it keeps the syrup sweet without adding any refined sugar. You can also use cane sugar or coconut sugar if that’s what you have on hand.
    • Ceremonial Grade Matcha: High-quality matcha is key for the smooth, vibrant green flavor. Ceremonial grade has a naturally sweet, earthy taste that makes this latte shine.
    • Hot Water: Just enough hot water helps the matcha dissolve fully and whisk into a smooth, clump-free base.
    • Milk of Choice: Use whatever milk you love! I used cashew milk, but almond, oat, or dairy milk all will work great.
    • Ice: A must for turning this into a refreshing iced latte. Filly your glass to the brim for those gorgeous layers.
    • Match Set: If you want to have a more authentic feel, you can get a matcha set with a bamboo whisk and bowl.

    Next, prepare the matcha. Add the matcha powder to a small bowl along with the hot water. Whisk for 1-2 minutes, until the mixture is completely smooth and free of clumps.

    Frequently Asked Questions

    Can I use a different sweetener instead of monk fruit?

    Yes! While I love using monk fruit to keep this latte naturally sweet and sugar-free, you can absolutely use other options. Cane sugar or coconut sugar work well here too. Just keep in mind that they may slightly change the flavor profile of the strawberry syrup.

    Do I need a matcha whisk and bowl?

    Technically, no; you can make this latte with just a small whisk or even shake it up in a jar. But I do recommend using a traditional matcha whisk and bowl if you can. They help dissolve the matcha powder evenly, giving you that smooth, frothy finish that makes the latte taste like it came straight from a café in Japan. I’ve linked a budget-friendly set so you don’t have to splurge!

    What’s the difference between ceremonial grade and culinary grade matcha?

    Ceremonial grade matcha is made from the youngest tea leaves, giving it a smoother, slightly sweet flavor that’s perfect for drinking. Culinary grade matcha is more bitter and better suited for baking or cooking. For this recipe, I recommend ceremonial grade; it makes all the difference in flavor and color.

    Can I make this ahead of time?

    You can definitely prep the strawberry syrup in advance. When you’re ready for a latte, just assemble everything fresh. I don’t recommend mixing the drink ahead of time, since the layers and froth are best enjoyed right after making it.

    What kind of milk works best?

    Truly any milk will do! I used cashew milk for its creaminess, but almond, oat, or regular dairy milk all make a delicious latte.
