When it comes to meal prep, my goal is always to make the process of prepping my favorite meals as simple and easy as possible, which is why I’m super excited to share a meal-prep friendly twist on one of my favorite breakfast recipes: omelettes. These Meal Prep Mason Jar Omelettes are a quick and easy way to make a protein-packed and veggie filled omelette in a matter of minutes!

Friends, how many of you love eggs for breakfast? When I think of a delicious, healthy, filling breakfast, the first thing that comes to mind are eggs. There are so many ways to prepare eggs, from egg muffins to breakfast sandwiches and, of course, your classic scrambled eggs. But when I think of an elevated, veggie-packed way to serve eggs, the winner has to be the omelette.
Traditionally, omelettes don’t take a ton of time to whip up, but they do require you to spend some time at the stove. Which, if you’re a busy mom like me, can simply require using time that you don’t have. But, I am a firm believer that even if you don’t have a ton of time in the mornings, you can still enjoy a delicious and healthy breakfast. That’s where this recipe comes in.
With these easy meal prep omelettes, all it takes is a few minutes of prep each week to whip up a delicious omelette in less than 2 minutes. When I say that it couldn’t be any easier, I truly mean it! In fact, once you see how easy it is to make these little omelette jars, you won’t want to make omelettes any other way, again. Trust me!


What You Need to Make These Adorable Omelette Jars
All you need are just a few ingredients to bring these delicious, nutritious, and adorable omelette jars to life!
- Eggs: Of course, you will need eggs to make these omelettes! The key here is to not crack the eggs into the jars until you are ready to eat them. Instead, keep the eggs and the jars prepped and stored separately!
- Oil: A little brush or spray of oil inside the jars will prevent the eggs from sticking.
- Omelette Fillings: This is where this recipe gets fun; you can truly fill these jars with any ingredients that you’d like! I personally love filling mine with fresh veggies like red onion, mushrooms, bell pepper, and a little pesto, but you can use any filling ingredients that you’d like. Feel free to get creative with this one! Chopped, pre-cooked bacon, feta cheese, or grilled chicken all make other delicious ingredient ideas.
- Sea Salt & Black Pepper: A touch of salt and pepper always make eggs so much tastier!

How to Make The Easiest Meal-Prep Omelettes
You won’t believe how easy it is to make these omelette jars! Simply start by preparing your filling ingredients: wash and chop all of your veggies into small pieces. If you’re using meat, pre-cook and chop your meat so that it will easily fit into the jars.
Next, divide your fillings equally amongst your four mason jars, making sure to fill the jars approximately halfway each. Then, cover the jars and refrigerate them until you’re ready to eat.
When you’re ready to eat your omelettes, simply remove one of the jars from the fridge and lightly grease the inside with a little bit of oil. Then, crack 1-2 eggs into the jar, place the cover back on, and shake the jar until the eggs are fully mixed with the omelette fillings.
Finally, remove the lid and place your jar into the microwave for 1 1/2 minutes, until the egg is fully cooked, light, and fluffy. Carefully remove the jar from the microwave, serve, and enjoy!

Can you Make These Omelettes Without a Microwave?
And if you’re wondering, “Nicole, can I make these omelettes without a microwave?” the answer is YES, you absolutely can!
If you prefer to make omelettes on the stove, in a more traditional way, you can simply use the jars to meal prep your fillings, the add the egg, shake, and add to a pan and prepare your omelette as usual. It’s simple, easy, and you’ll still have a delicious omelette ready in no time!

Question …. I’m wondering if I use a bit of coconut oil in the jar then add ingredients and eggs and store in the fridge this way of adding the eggs before cooking. Trying to meal prep before surgery and want to make sure my kids have easy to prepare meals and snacks set up
Hi Jennifer! Typically, it’s best to leave raw eggs in their shell until right before use (for bacteria reasons) so I wouldn’t suggest it. Alternatively, you could go ahead and cook the omelettes and store them in the fridge cooked – they could last about 3-4 days this way. Hope your surgery goes well!
