My Favorite Blueberry Cobbler Smoothie

Blueberry cobbler is one of my favorite desserts, and when it’s in a smoothie form that I can make every day? It’s even better. This Blueberry Cobbler Smoothie not only tastes just like your favorite dessert in a glass, but is full of gut-healthy ingredients to set your digestion system up for success. It’s the perfect all-in-one smoothie, and makes for a delicious breakfast, lunch, or post-workout snack!

I am back today with another smoothie recipe, and I know I say this every time, but seriously, this one is my new favorite. When I say that it tastes like a dessert in a glass, it truly does! It’s thick, creamy, and loaded with blueberries, and get its sweetness from bananas. And if that’s not amazing enough, then we’re also making a healthy, crumble topping to go on this smoothie. And friends, it is literally HEAVEN.

I love sharing recipes that are not only delicious, but also super healthy, and I’m so excited because this smoothie in particular is loaded with ingredients that are beneficial for your gut health. But back to this smoothie; like I mentioned earlier, this smoothie is full of gut-healthy ingredients, according to Seed’s Periodic Table of Microbiome-Friendly Foods. In this recipe, those foods include the blueberries, bananas, yogurt, almonds, and oats.

  • Blueberries: Blueberries are loaded with antioxidants, as well as fiber and Vitamins C and K.
  • Bananas: Bananas are not only rich in fiber as well, but also contain prebiotics and inulin – a type of dietary fiber that can help to restore the lining of the gut.
  • Yogurt: High-quality yogurt (like greek yogurt!) is lower in lactose and instead, is full of protein. Plus, it’s fermented, which created natural probiotics that help to feed the good bacteria in your gut.
  • Almonds: Almonds are full of healthy fats and Vitamin E.
  • Oats: Oats are high in beta-glucan, which is a soluble fiber that can help improve digestion and feed the good bacteria in your gut.

What Else You Need to Make This Blueberry Banana Cobbler Smoothie

Aside from the microbiome-friendly foods listed above, here are the other ingredients that you need to make this smoothie!

  • Non-Dairy Milk: Any non-dairy milk works well here! I use almond milk, but use whatever you have. 🙂
  • Vanilla Extract: A little vanilla extract really makes this smoothie taste like dessert. Don’t skip this!
  • Cinnamon: Cinnamon is an essential ingredient in a blueberry cobbler, and adds a delicious kick to this recipe.
  • Coconut Sugar: Coconut sugar gives sweetness to our crumbled topping, without the refined sugars that can be harmful to our gut health, if consumed regularly.
  • Coconut Oil / Butter / Ghee: You can use any of these ingredients in the crumble topping, and they will all work well! 

How to Make Oat Flour

You might have noticed that the cobbler topping requires oat flour. While oat flour can be found at most health food stores, it is SO easy to make a large batch of it at home, which will save you both time and money!

How to Make This Blueberry Banana Cobbler Smoothie

  1. Start by adding the cobbler topping ingredients to a small bowl and mixing them together until a crumble mixture forms. I like to use my fingers here to pinch together the ingredients. Set aside once done.
  2. Next, prepare the smoothie. In a high-speed blender, add together all of the smoothie ingredients and blend until fully combined. You may need to scrape down the sides a few times and re-blend, to make sure that everything is fully incorporated. You can also add in more liquid depending on how thick you like your smoothies.
  3. Pour into a glass, top with the crumbled topping, and enjoy!

Ingredients

For the Smoothie:

  • 1 Cup Frozen Blueberries
  • ½ Frozen Banana
  • 5 Ounces Vanilla Greek Yogurt
  • 1 Tablespoon Almond Butter
  • ¾ Cup Non-Dairy Milk of Choice I use almond milk
  • ¼ Cup Gluten-Free Rolled Oats
  • 1 Teaspoon Vanilla Extract
  • ¼ Teaspoon Cinnamon

For the Cobbler Topping:

  • 2 Tablespoons Oat Flour OR Almond Flour
  • 2 Tablespoons Gluten-Free Rolled Oats
  • 1 Tablespoon Coconut Sugar
  • ½ Teaspoon Cinnamon
  • 2 Teaspoons Coconut Oil OR Butter OR Ghee

Instructions

    Blueberry 🫐 cobbler smoothie taste like dessert for breakfast!   3. This is so good. Tastes like a summer blueberry dessert. I drank it so fast. I also just saw that this recipe is two servings but I consumed the whole thing just myself. But, it’s ok bc it’s healthy, right!? I was out of oats so I ended up using overnight oats that I’d already mixed together with some of these ingredients.
