If you like COOKIE DOUGH and you like FUDGE, then my COOKIE DOUGH FUDGE is for you! It’s a winner and I’ve been so excited to share this recipe with you because it’s become a fam favorite! What more could you ask for?
- 3 cups cashews
- ¼ cup coconut flour
- ¼ cup melted Wedderspoon raw beechwood honey
- ½ tsp vanilla
- ½ tsp cinnamon or nutmeg
- ¼ tsp salt
- 6 tbsp melted coconut oil
- 1 cup dairy free chocolate chips
Line a 9 x 5 baking pan with parchment paper (coat pan with coconut oil to parchment paper sticks).
In a food processor or high speed blender, pulse/blend cashews until they turn into meal.
Scrape down sides and continue pulse/blending for a few minutes until the oils start to release.
Add 1 tb of the melted coconut oil and process till a dough forms.
Transfer dough into a bowl.
Add remaining coconut oil, coconut flour, melted honey, vanilla, salt and cinnamon/nutmeg and mix together using a whisk or hand mixer (preferred) until nice and smooth.
Freeze for 20 minutes.
Remove from freezer and stir in chocolate chips.
Press dough into baking pan until flat and even.
Freeze another 20 minutes before slicing and devouring! Enjoy!XO
