    PALEO BROWNIE BITES - INGREDIENTS1/2 avocado1 egg1/4 cup maple syrup1/4 cup coconut oil, melted1/4 cup coconut cream (the thick white part in a can of coconut milk!)1/2 cup cacao powder (or cocoa powder)1 tsp vanilla extract1 scoop collagen peptides (totally optional, but great for skin, hair, joints!)1/2 cup Enjoy Life Foods dairy free mini chocolate chips

    PALEO BROWNIE BITES

    Ingredients

    • ½ avocado
    • 1 egg
    • ¼ cup maple syrup
    • ¼ cup coconut oil, melted
    • ¼ cup coconut cream (the thick white part in a can of coconut milk!)
    • ½ cup cacao powder (or cocoa powder)
    • 1 tsp vanilla extract
    • 1 scoop collagen peptides (totally optional, but great for skin, hair, joints!)
    • ½ cup Enjoy Life Foods dairy free mini chocolate chips

    Instructions 

    1. Preheat oven to 350.
    2. Line a muffin tin with 12 mini muffin liner cups. If you don’t have the mini ones, just use 8 regular sized muffin liner cups.
    3. In a blender, blend the egg, avocado, maple syrup, coconut oil, vanilla extract, cinnamon, and coconut cream. The batter will be super thick. Use a spatula to scrape down the sides if necessary.
    4. Pour the batter into a medium bowl, and add the cacao powder. Mix until well incorporated.
    5. Use a spoon to fill each muffin liner with batter, about 3/4 way full.
    6. Sprinkle mini chocolate chips on top of each one.
    7. Bake for 13-14 minutes, until just set.
    8. Let cool and then EAT and ENJOY! You could add some sea salt flakes on top if you like!
