Paleo Peppermint Patties

    PALEO PEPPERMINT PATTIES - INGREDIENTS1 cup Artisana Organics coconut butter2 tb Wedderspoon Official honey 1/2 tsp peppermint extract 1/4 tsp vanilla extract1/2 Hu Kitchen vanilla qrispy chocolate bar (or chocolate of choice)

    I’m thinking these PALEO PEPPERMINT PATTIES might be better than a York Peppermint patty and Junior Mints combined, I may be biased, but coming from the gal that used to bring king size versions of the aforementioned treats to the movie theater, I think you should believe me. To make them you need only five ingredients: coconut butter, peppermint extract, vanilla extract, honey, and your favorite chocolate. SOOOO EASY RIGHT?

    PALEO PEPPERMINT PATTIES

    Ingredients

    • 1 cup Artisana Organics coconut butter
    • 2 tbsp Wedderspoon Official honey
    • ½ tsp peppermint extract 
    • ¼ tsp vanilla extract
    • ½ Hu Kitchen vanilla qrispy chocolate bar (or chocolate of choice)

    Instructions 

    1. Slightly melt the coconut butter if it’s hard. I placed mine in the microwave for two 30 second intervals.
    2. Stir in the honey and extracts. 
    3. Let refrigerate for 30 min to harden.
    4. Remove from oven and using a spoon or cookie scoop, form patties and place on parchment lined baking sheet. Melt chocolate and drizzle on top!
