
Ingredients
FOR THE CRUST:
- 1 ½ cups almond flour
- ¼ cup coconut flour
- 3 tbsp maple syrup or coconut sugar
- ½ cup apple sauce
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon
- pinch sea salt
FOR THE FILLING:
- 1 ½ cups dried figs
- 1 cup fresh strawberries
- juice of 1/2 lemon or orange
- ½ tsp cinnamon
- 2 tbsp chia seeds (optional)
Instructions
- Preheat oven to 350.
- Line an 8×8 baking dish with parchment paper (spray inside with oil first so that the parchment paper sticks). In a food processor or high speed blender, add the filling mixture and pulse/blend until you have a jam-like consistency.
- Next, add the crust ingredients to a medium size bowl and mix well.
- Place half the mixture into the baking dish and use a spatula to press down evenly.
- Pour the filling mixture in and spread evenly.
- Top with remaining crust mixture.
- Then sprinkle a little cinnamon on top!
- Bake for 30 minutes.
- Let cool completely and cut into 12 squares.
- Store in the fridge.Enjoy!!!!
