
Ingredients
- 4 large sweet potatoes
- ½ cup diced onion
- 1 sprig fresh rosemary, chopped
- ¼ cup 1/4 chopped pecans
- 1 8 oz bottle Primal Kitchen Greek Dressing (use any dressing of choice! Also highly recommend bbq sauce)
- Salt & pepper to taste
Instructions
- Preheat oven to 400.
- Scrub sweet potatoes.
- Slice thinly with a mandolin (you can get an inexpensive one on amazon).
- Spray an 8×8 baking dish generously with avocado/coconut oil.
- Line up the sweet potatoes like dominos and make sure to pack them together right.
- Dice onions and start placing them in between the sweet potatoes.
- Pour dressing of choice evenly over the sweet potatoes.
- Bake for 40 minutes.
- Remove from oven.
- Sprinkle with chopped rosemary, pecans, salt and pepper!
