    PALEO SWEET POTATO BAKE - INGREDIENTS4 large sweet potatoes1/2 cup diced onion1 sprig fresh rosemary, chopped1/4 chopped pecans1 8oz bottle Primal Kitchen Greek Dressing (use any dressing of choice! Also highly recommend bbq sauce)Salt & pepper to taste

    PALEO SWEET POTATO BAKE

    Ingredients

    • 4 large sweet potatoes
    • ½ cup diced onion
    • 1 sprig fresh rosemary, chopped
    • ¼ cup 1/4 chopped pecans
    • 1 8 oz bottle Primal Kitchen Greek Dressing (use any dressing of choice! Also highly recommend bbq sauce)
    • Salt & pepper to taste

    Instructions 

    1. Preheat oven to 400.
    2. Scrub sweet potatoes.
    3. Slice thinly with a mandolin (you can get an inexpensive one on amazon).
    4. Spray an 8×8 baking dish generously with avocado/coconut oil.
    5. Line up the sweet potatoes like dominos and make sure to pack them together right.
    6. Dice onions and start placing them in between the sweet potatoes.
    7. Pour dressing of choice evenly over the sweet potatoes.
    8. Bake for 40 minutes.
    9. Remove from oven.
    10. Sprinkle with chopped rosemary, pecans, salt and pepper!
