My latest obsession is everything pineapple, so I created this easy Pineapple Oatmeal Bake for you guys! As you can see from the ingredient list and instructions, this is super easy to make. And oatmeal is a great way to start the day and keep you full for hours…especially with the addition of the ground flaxseed which I added to this recipe for that very reason!
You can use fresh or frozen pineapple, but diced canned pineapple works well too. You will see that I also added freeze dried pineapples from the brand Bare Snacks, just to add lots of crunch, but it’s just an optional ingredient and not necessary to make this recipe! Ingredients
- 1 cup gluten free rolled oats
- 2 tablespoons ground flaxseed meal
- ¼ cup unsweetened shredded coconut
- 1 banana, mashed
- 1 cup almond milk
- ½ cup crushed pineapple, from the can
- ½ cup Bare Snacks Simply Pineapple, optional
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
Optional glaze:
- 2 tablespoons powdered sugar
- ½ teaspoon water
Instructions
- Preheat oven to 350.
- Grease a 4×6 baking dish (or four small ramekins) with oil of choice.
- In a medium bowl, mash the banana.
- Add the rest of the ingredients to the bowl and mix well.
- Transfer to the baking dish.
- Add some extra pineapples to the top, and bake for about 20 minutes.
- If you are topping your oatmeal make with the glaze, whisk together the glaze ingredients, and then drizzle it on top.
- Enjoy!
