    These Quick Marinated Artichoke Hearts are the perfect snack. Made from just 5 simple ingredients, they are perfect for adding on top of your favorite pizza, salads, sandwiches or enjoying straight from the jar.     If you loved the Quick Marinated Red Onions that I shared the other week, then you are going to love these Artichoke Hearts. Artichokes are one of my favorite ingredients. They are packed with antioxidants and are a great source of fiber, vitamins C and K, and potassium. And, can even help lower cholesterol and improve digestion. Plus, they’re low in calories and fat, making them an excellent choice for anyone looking for a healthy snack.

    Not to mention, canned artichokes are incredibly inexpensive, which means that these Quick Marinated Artichoke Hearts are the perfect budget-friendly pantry staple to take any recipe to the next level. I love to throw these artichoke hearts on top of a slice of cheese pizza for that punchy, vibrant flavor. But, these artichoke hearts are also great on top of salads, inside of sandwiches, or even just enjoyed on their own!

    And the best part is: they come together with minimal prep. This recipe comes together in just 5 minutes – it’s the perfect “set it and forget it” recipe!

    To make these marinated artichoke hearts, you’ll need artichoke hearts, red wine vinegar, kosher salt, olive oil, and dried oregano.

    Add the artichoke hearts to a bowl alongside the kosher salt and red wine vinegar. Toss to combine, then allow the onions to marinate in the salt and vinegar for 10 minutes. Then, add in the olive oil and dried oregano, tossing to coat well.

    What You Need to Make These Elevated Artichokes

    • Artichoke Hearts: The easiest way to make this recipe is with canned artichoke hearts. You’ll need two cans of plain artichoke hearts. Be sure to drain and rinse them well!
    • Red Wine Vinegar: Red wine vinegar is punchy and bright, adding the perfect briny flavor to these onions.
    • Kosher Salt: A generous amount of salt will help to soften the artichoke hearts. Don’t skip this!
    • Olive Oil: Olive oil is not only full of healthy fats, but it also adds a delicious flavor to these Marinated Artichoke Hearts.
    • Dried Oregano: This adds a delicious, herby flavor to these artichokes, while keeping them versatile enough for any recipe!

    How to Make These Simple & Easy Marinated Artichoke Hearts

    To make these Quick Marinated Artichoke Hearts, start by preparing the artichokes. Open up two cans of quartered artichoke hearts and drain the water from them. Rinse them well.

    Next, add the prepped artichoke hearts to a bowl alongside the kosher salt and red wine vinegar. Toss to combine, then allow the onions to marinate in the salt and vinegar for 10 minutes. Then, add in the olive oil and dried oregano, tossing to coat well.

    Allow the artichoke hearts to marinate for another 20 minutes. Once they’re done, transfer them to an airtight container and store them at room temperature for 3-4 days.
