OVEN ROASTED SESAME SWEET POTATO FRIES - INGREDIENTS4 medium sized japanese sweet potatoes, washed and scrubbed2 tsp garlic powder1 tsp sea salt4 tb sesame oilDIPPING SAUCE:The world is your oyster! sometimes we like ketchup, but today we used organic guacamole.

I’m not sure about you guys, but I am obsessed with sweet potato fries, no matter what shape, size, or color they come in. I don’t discriminate, and in fact, I could probably live off SPF alone! But that said, I wanted to change things up today, and give them a slightly different taste. Today I oven roasted them in sesame oil instead of using avocado oil, which is what I almost always do.

Most people don’t think of baking with sesame oil, but you can. Sesame oil has a high smoke point of 410 degrees F (210 degrees C). So while I typically oven roast my fries using avocado oil at 425 degrees, I do these at 400 degrees and bake them for slightly longer. Welcome, my friends, to the most delicious way to eat your sweet potato fries!

Now, I do believe these are Whole 30 approved. I have read all the rules, and while cooking with seed oils is discouraged, the modern approach is that you can have sesame oil, as long as there are no other non-compliant ingredients. So pair yours with a homemade guac with compliant ingredients, and BOOM, there you go.

Today I didn’t have time to make fresh guacamole, but man I was craving it. Luckily I had a few tubs of Yucatan Organic guacamole in my fridge that needed to be put to good use, so there you have it. My kids love this guac, so much so that Gavyn has been known to faceplant in it, double dip, triple dip, and eat the whole damn container.

So without further ado, I introduce to you my Oven Roasted Sesame Sweet Potato Fries.

    • The world is your oyster! sometimes we like ketchup, but today we used organic guacamole.

    Instructions

    1. Preheat oven to 400.
    2. Cut the sweet potatoes in half and then lengthwise, into 1/2 inch strips.
    3. In a medium bowl, add the potatoes, salt, garlic powder, and sesame oil.
    4. Make sure to coat the potatoes well.
    5. On a parchment lined baking sheet, add the sweet potatoes in a single layer.
    6. Bake for 22 minutes.
    7. Remove from the oven and flip them over once.
    8. Bake for another 20-22 minutes. They should be slightly crispy on the outside.
    9. If they are not, then turn on the broiler for 30 seconds to 1 minute, watching carefully so they don't burn.
