Imagine for a moment if your favorite candy bar got a healthy and delicious high-protein twist – except with this recipe, you don’t have to imagine. These are my Snickers Mousse Cups, and these rich and creamy cups are filled with all of the ingredients of a classic Snickers bar that you know and love. They start out with a creamy, greek-yogurt peanut butter base, topped with a thick peanut butter layer, a hard chocolate topping, and a finish of chopped peanuts and sea salt. The end result? The perfect healthy snack to satisfy your chocolate cravings.

Friends, if you’re still under the assumption that eating a high-protein diet needs to be boring, then let this recipe be proof that isn’t true. If you had told me years ago, back when I was first beginning my health and fitness journey (after recovering from years of Binge Eating Disorder), that I could eat chocolate mousse and hit my protein goals… I wouldn’t have believed you. The truth is, high-protein recipes have come a long way from the sad, boring, brick-like protein bars and cardboard-tasting protein chips (you know exactly which ones). In my opinion, eating high-protein has never been easier, especially with recipes like this!

These fluffy and creamy mousse cups taste just like a classic Snickers bar. They come together with several layers — first, with the creamy mousse base, second, with the peanut butter layer, and third, with the hard chocolate topping. It’s exactly like the classic candy bar, only it’s free from refined sugars, made from whole foods ingredients, and yes, is also high-protein. They also happen to be perfect for prepping ahead. This recipe makes enough for four servings, and can easily be doubled to make enough servings to enjoy throughout the week!

That is… if they’ll last that long. While these Snickers Mousse Cups are perfect if you are on a healthy and fitness journey, they are also perfect for serving to picky kids who love sugar. Since creating this recipe, I’ve regularly kept these stocked in my fridge, and my boys love being able to reach for them whenever their sweet tooth cravings strike. Plus, I love knowing that they are reaching for a healthier snack that will keep them feeling full and satisfied. It’s truly a win-win!

To make these mousse cups, start by preparing the mousse. Add the greek yogurt, powdered peanut butter, and maple syrup to a medium bowl. Mix until smooth.

What You Need to Make This Rich & Creamy Dessert

  • Greek Yogurt: Rich and creamy greek yogurt makes for the perfect base for this mousse. It’s thick and creamy, low in lactose, and packed with protein, making it a healthier alternative to traditional heavy cream.
  • Powdered Peanut Butter: Powdered peanut butter is perfect for this recipe because it has a rich, peanut butter flavor but doesn’t influence the texture of the mousse base.
  • Creamy Peanut Butter: I recommend using creamy peanut butter, to ensure that the peanut butter layer is the perfect consistency. The more liquid-y, the better!
  • Maple Syrup: Maple syrup is my favorite sweetener to use in these recipes, because it’s free from refined sugars, but is still perfectly sweet.
  • Water: A little water combines with the peanut butter and maple syrup to create a thin, drizzly layer.
  • Chocolate Chips: Pick your favorite chocolate chips and use them in this recipe. I opt for dairy-free chocolate chips, but I always will recommend using what you already have.
  • Coconut Oil: A little coconut oil combines with the chocolate to give it a rich and velvety texture that also freezes perfectly.
  • Garnishes: These are optional, but I love garnishing these mousse cups with chopped salted peanuts and a little sea salt!

How to Make These High-Protein Mousse Cups

To make these mousse cups, start by preparing the mousse. Add the greek yogurt, powdered peanut butter, and maple syrup to a medium bowl. Mix until smooth. Divide the yogurt mixture between four individual jars. Set them aside.

Next, in a separate bowl, mix together the creamy peanut butter, maple syrup, and water, until the mixture is smooth and easy to drizzle. Drizzle the mixture evenly on top of each jar. Then, prepare the chocolate topping. Add the chocolate chips and coconut oil to a small bowl.

Transfer them to the microwave and microwave them in 2-3, 30 second increments, stirring in-between. You can also do this on the stove, using the double-boiler method. Once the chocolate is melted, spoon it evenly on top of each jar. Then, crush the peanuts and sprinkle them on top, followed by the sea salt.
