    Friends, in the summertime, there is nothing that I love more than a sandwich. Whether I am throwing one in my bag to eat during my boy’s baseball games, or whipping one up as an easy way to clear out the leftovers from the fridge, sandwiches are such an easy, simple recipe that comes together in minutes.

    However, I don’t always love eating tons of bread. While I’m not gluten-free (I get asked this question a lot!) I am conscious of the fact that eating a lot of bread doesn’t make my stomach feel good. And sometimes, the thick slices of bread on a sandwich can make my stomach hurt, which is why I love to find alternatives that are lighter on my stomach – like these zucchini wraps!

    These wraps are made from thin slices of zucchini that are layered together in a rectangle (like sandwich bread), topped with a sprinkle of mozzarella cheese, and are baked to golden perfection. The result is a thin, pliable wrap that is perfect for filling with all of your favorite sandwich ingredients. I love to layer in sliced turkey, cheese, tomatoes, and lettuce, but the options don’t stop there – steak, chicken, or even a crispy caesar salad would all make for delicious fillings for this wrap!

    The key to making these wraps is to make sure that you slice the zucchini slices thin, using a mandolin. This will ensure that the zucchini slices are also even, so that they will cook nice and evenly. Just be sure to move carefully, as a mandolin is super sharp!

    To make this wrap, you’ll need zucchini, mozzarella cheese, olive oil, sea salt, and ground black pepper. That’s it!

    • Zucchini: Of course, this wouldn’t be a zucchini wrap without the zucchini! You’ll need two whole zucchinis in order to make this recipe.
    • Mozzarella Cheese: A sprinkle of mozzarella cheese adds a delicious, cheesy flavor to these wraps that truly take them to the next level. You can also use dairy-free shredded cheese, if desired, to keep this recipe dairy-free or vegan-friendly!
    • Olive Oil: Olive oil is full of healthy fats and helps the zucchini to crisp up perfectly. Just be sure to go easy on the oil, as too much oil can leave these zucchini wraps soggy, rather than crispy.
    • Sea Salt & Ground Black Pepper: A pinch of salt and pepper adds the perfect flavor to these zucchini wraps, while keeping the flavor versatile enough to suit any sandwich recipe!

    How to Make These Easy Zucchini Wraps

    To make these wraps, start by preheating your oven to 350 F. Next, prepare the zucchini. Wash the zucchinis and slice them nice and thin, using a mandolin. Then, lay the zucchini slices in a 5 x 4 slice rectangle, being sure to overlap them so that there are no gaps.

    Next, drizzle the olive oil very lightly over the zucchini rectangles and season them with a sprinkle of sea salt and ground black pepper, Be sure to not use too much oil, otherwise the zucchini wraps will get soggy! Then, sprinkle the mozzarella cheese across the tops of the zucchini rectangles.

    Transfer the zucchini to the oven and allow it to bake for 25 minutes, until the cheese on top is golden and bubbly. Once the wraps are done, remove them from the oven. Allow them to cool completely, then fill with your favorite sandwich ingredients and enjoy!

    How many zucchinis do I need, in order to make this recipe?

    You’ll need two whole zucchinis in order to make two wraps (aka one full sandwich!) Essentially, make note to use two whole zucchinis per one full wrap. Also note that the size of the zucchini slices will dictate the size of the wrap!

    Can this wrap be prepared ahead of time?

    Since zucchini has a high water content, and since this recipe comes together fairly quickly, I recommend not preparing this recipe ahead of time, as it can lead to the wraps getting soggy.

    What can I fill these wraps with?

    Pick your favorite sandwich ingredients and use them to fill these wraps! Turkey slices, sliced chicken breast, sliced ham, steak, or your favorite veggies!
