    These Chocolate Covered Strawberry Brownies are the ultimate treat — fudgy, fruity, and so much better than plain brownies. I said what I said! We’re talking a rich brownie base topped with a layer of sweet strawberry jam, fresh sliced strawberries, and a glossy chocolate coating finished with a pinch of flaky salt. They’re messy and they are absolutely worth every single bite. Oh, and did I mention they come together using a boxed brownie mix?

    Friends, I have to be honest with you, @choosing_balance posted something so unbelievably good that I could not stop thinking about it. I ran straight to my kitchen and made a batch inspired by hers. So here we are! These Chocolate Covered Strawberry Brownies are officially the Valentine’s Day (or any day you need a brownie!) treat you didn’t know you needed, and I am so excited to share them with you.

    Now, I know what you might be thinking — “shouldn’t I make brownies from scratch?” And listen, I love a good from scratch brownie as much as the next person. But when you’ve got a glossy chocolate layer, fresh strawberries, AND a jammy strawberry filling happening on top, the boxed mix is your best friend. It saves time, it’s reliable, and it lets the toppings really shine. Work smarter, not harder, right?

    These brownies are everything I love about chocolate-covered strawberries, but in a totally shareable, slice-and-serve format. The jam layer keeps things extra gooey and sweet, the fresh strawberries add a juicy brightness that cuts through the richness of the chocolate, and the flaky salt on top is non-negotiable.

    What You Need to Make These Chocolate Covered Strawberry Brownies

    • Boxed Brownie Mix: The hero of this recipe! Use your favorite brand — whatever you love and trust — but I used Ghirardelli. Just follow the package instructions and you’re golden.
    • Strawberry Jam: A full jar of strawberry jam gets spread right over the cooled brownies, creating a sweet, fruity layer that holds everything together. It’s simple and SO good.
    • Strawberries: You’ll need 3 cups of fresh strawberries, sliced. They press right into the jam layer.
    • Chocolate Chips: Chocolate chips get melted down into a smooth, glossy coating that gets poured over the whole thing. I recommend semi-sweet for the best balance of sweet and rich, but dark chocolate works too if that’s your preference.
    • Coconut Oil: Just a little bit of coconut oil gets melted with the chocolate chips to help them melt smoothly and set into that perfect glossy shell. Don’t skip it!
    • Flaky Salt: A generous sprinkle of flaky salt over the top of the chocolate is the finishing touch that makes these brownies taste truly next-level.

    Next, melt the chocolate. Add the chocolate chips and coconut oil to a large microwave-safe bowl. Microwave in 30-second increments, stirring well between each one, until the chocolate is completely smooth and melted — this usually takes 2 to 3 rounds.

    How to Make These Easy Chocolate Covered Strawberry Brownies

    Start by making your brownies according to the package instructions. Once they’re baked, set them aside and let them cool completely before adding any toppings — this step is important! If the brownies are still warm, the jam will slide right off and the chocolate won’t set properly.

    Once your brownies are fully cooled, spread an even layer of strawberry jam over the top, making sure to get all the way to the edges. Then, press your sliced strawberries into the jam in an even layer. I like to arrange them in slightly overlapping rows so that every slice gets a good amount of strawberry in each bite.

    Next, melt the chocolate. Add the chocolate chips and coconut oil to a large microwave-safe bowl. Microwave in 30-second increments, stirring well between each one, until the chocolate is completely smooth and melted — this usually takes 2 to 3 rounds. Once melted, pour the chocolate over the strawberries, using a spatula to spread it into an even layer.

    Sprinkle generously with flaky salt, then transfer the brownies to the freezer for 10 minutes, or the refrigerator for 20 minutes, until the chocolate has fully hardened. Once set, slice into squares and enjoy!
