Introducing my Easy Lemon Blueberry Baked Oatmeal, a delicious, fluffy, simple twist on the classic oatmeal recipe. By combining rolled oats with just a few simple ingredients and baking it in the oven, it becomes a fluffy, cake-like treat that is anything but boring!

    While I fully live by the belief that ALL foods have a place at my table, there is something truly satisfying about a plant-based breakfast. Don’t get me wrong, I absolutely love a hearty breakfast of soft scrambled eggs with all of the sides, but some days, I just want a simple, yet satisfying, plant-based meal. And on those days, nothing tastes as good as delicious baked oatmeal.

    Now, if you think you don’t like oatmeal, but haven’t tried baked oatmeal, then you definitely need to try this recipe. Baked oatmeal is traditional oatmeal’s cooler, younger little sister. Instead of being made on the stovetop with milk or water, these oats are made into a batter with eggs (or flax eggs), milk, and all of the fixings and then baked in the oven. And the end result? A fluffy pan of oatmeal that can be sliced up and enjoyed on-the-go. What could be better than that?!

    This baked oatmeal is loaded with zesty lemon and hearty blueberries for an unbeatable flavor combination. Plus, it’s naturally gluten-free and can easily be made vegan-friendly as well- just swap the eggs and milk for vegan-friendly alternatives and you’re good to go!

    To make this oatmeal, you will need eggs, milk, vanilla extract, maple syrup, lemon zest and juice, rolled oats, poppy seeds, cinnamon, baking soda, sea salt, and blueberries.

    Prepare the wet ingredients: add the eggs, milk, vanilla extract, maple syrup, lemon juice, and lemon zest to a bowl and whisk until they’re fully combined.

    What You Need to Make This Healthy, Plant-Based Breakfast

    • Eggs: The key to making this oatmeal light and fluffy is to use eggs. Either traditional eggs or flax eggs work well, in this recipe!
    • Milk: Pick your favorite milk and use it in this recipe! Both dairy and non-dairy milk work equally as well, in this recipe.
    • Vanilla Extract: A touch of vanilla extract adds the most delicious flavor to this oatmeal!
    • Maple Syrup: Maple syrup adds just the right amount of sweetness- plus, when I think of maple syrup, I think of breakfast!
    • Lemon Zest and Juice: This wouldn’t be a Lemon Blueberry Baked Oatmeal without the lemon, and both lemon juice and zest add that perfect lemony flavor.
    • Rolled Oats: Of course, it wouldn’t be oatmeal without the oats! If you’re gluten-free be sure to use gluten-free friendly oats.
    • Poppy Seeds: These are optional, but I love the addition of poppy seeds in this oatmeal.
    • Cinnamon: A pinch of cinnamon adds the best flavor to this oatmeal.
    • Baking Soda: Baking soda is what helps this oatmeal rise!
    • Sea Salt: A pinch of sea salt adds the perfect balance of flavor to this oatmeal.
    • Blueberries: Both frozen and fresh blueberries work well in this recipe. For optimal nutritional benefits, I always opt for wild organic blueberries.

    Then, grease a baking dish and add in all of the dry ingredients: the rolled oats, poppy seeds (if using), cinnamon, baking powder, and kosher salt. Pour the wet ingredients on top of the dry ingredients and mix until they’re fully combined.

    How to Make This Simple and Easy Fluffy Baked Oatmeal

    To make this baked oatmeal, start by preheating your oven to 350 F. Next, prepare the wet ingredients: add the eggs, milk, vanilla extract, maple syrup, lemon juice, and lemon zest to a bowl and whisk until they’re fully combined.

    Next, grease an 8×8 or 9×11 baking dish with oil or butter and set it aside. Add all of the dry ingredients to the baking dish: the rolled oats, poppy seeds (if using), cinnamon, baking powder, and kosher salt.

    Fold in the blueberries and grate additional lemon zest on top of the oat mixture, if desired. Then, transfer the dish to the oven and bake for 32-35 minutes, or until the top has set.

    Once it’s done, remove it from the oven and allow it to cool slightly before slicing it into 8 squares. Finally, serve and enjoy!

    Pour the wet ingredients on top of the dry ingredients and mix until they’re fully combined. Then, fold in the blueberries. Grate additional lemon zest on top of the oat mixture (if desired) and transfer the baking dish to the oven.

    Bake the oatmeal for 32-35 minutes, or until the top has set. Once it’s done, remove it from the oven and allow it to cool slightly before slicing it into 8 squares. Finally, serve and enjoy!

    Ingredients

    • 2 Eggs, or substitute 2 "flax eggs" to make this recipe egg-free
    • 1 ⅓ Cup Milk of choice, I use almond milk
    • 2 Teaspoons Vanilla Extract
    • ½ Cup Maple Syrup
    • 1 Lemon, zested and juiced – this is approximately 1/4 cup
    • 2 Cups Rolled Oats
    • 3 Tablespoons Poppy Seeds, optional but highly recommended!
    • 1 Teaspoon Cinnamon
    • ½ Teaspoon Baking Powder
    • ¼ Teaspoon Kosher Salt
    • 1 ½ Cups Fresh Blueberries

    Instructions 

    1. To make this baked oatmeal, start by preheating your oven to 350 F.
    2. Next, prepare the wet ingredients: add the eggs, milk, vanilla extract, maple syrup, lemon juice, and lemon zest to a bowl and whisk until they're fully combined.

      These taste exactly like my favorite lemon-blueberry cookies but WAY healthier. The lemon was very prominent (and I was glad it was!) I could’ve eaten the whole batch in 1 sitting.

      I have made this for breakfast, at least a dozen times so far. My family and I absolutely love the blueberry and lemon together! It is both satisfying and delicious. I always add protein powder and it turns out perfectly everytime. Its great warm or cold, and is also great as a snack or dessert.
