Off to LA today for a whirlwind two days of eating all the samples at @natprodexpo and coming home with a suitcase full of snacks and a tummy ache. But first, GREEK QUINOA SALAD WITH LEMON VINAIGRETTE, a little savory dish for you guys to make while I’m gone!

Ingredients
FOR THE SALAD:
- 1 cup quinoa
- 1 red bell pepper, seeded and finely diced
- ½ cup finely chopped green onion
- 2 tbsp chopped fresh dill
- ½ cup chopped kalamata olives
- optional: feta cheese
FOR THE VINAIGRETTE:
- ¼ cup olive oil
- juice from 1-2 lemons (i use 2!)
- 1-2 cloves garlic, mashed
- 1 tsp oregano
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Rinse quinoa in a strainer.
- In a medium saucepan, add quinoa + 2 cups of water, and bring to a boil over medium heat.
- Once boiling, reduce heat to low, cover, and simmer for 15 minutes.
- Remove cover from the pan, and fluff the quinoa.
- Next, chop the bell pepper, green onion and dill, place in a large bowl.
- Add the quinoa and mix together well.
- Last step is to make the dressing. Whisk together the dressing ingredients. toss salad with the dressing and add salt/pepper to taste.
