Friends, whenever I go down to Los Angeles to visit my family, there is one place that I ALWAYS have to go to, and that is Erewhon. If you’re unfamiliar with Erewhon, it is truly the best grocery store in the world. It is only in LA, and is home to the best of the best when it comes to health and wellness products. Not to mention, it’s also home to their famous smoothies (you know, those $20 smoothies that are viral on TikTok?) as well as their hot bar. In my opinion, the hot bar is truly the best part! It’s filled with the most delicious mains, side dishes, and salads that are truly unlike anything else. And my new favorite Erewhon salad? It’s none other than their Summer Citrus Salad.
When I went down to LA a few weeks ago, I ate this salad not once, not twice, but over three times in just the few short days that I was there. It was THAT good! There was something about the perfect blend of crisp lettuces, paired with the tart and sweet citrus fruits, and tied together with the tangy lemon-shallot vinaigrette that was truly one of the best salads I’ve eaten in years. I knew as soon as I tasted it that I needed to come home and recreate it, and I think this recipe truly nails it!
To make this salad, you will need radicchio, curly kale, romaine lettuce, avocados, grapefruit, orange, sunflower seeds, and the Lemon-Shallot VinaigrettePrepare the dressing. Add the dressing ingredients (the olive oil, shallots, garlic, dijon mustard, lemon, kosher salt, and ground black pepper) to a small bowl and whisk until fully combined.
What You Need to Make This Vegan-Friendly Salad
🥬 Radicchio, Curly Kale, & Romaine Lettuce: This salad comes together with a base of three different lettuces: radicchio, curly kale, and romaine lettuce. The combination of the three makes for the perfect, crunchy salad base. Make sure to use all three!
🥑 Avocados: Avocados add a delicious creaminess to this salad, in addition to the healthy fats.
Grapefruit: In my opinion, the star of this summertime salad is the segmented grapefruit. It’s tart, juicy, and adds such a bright and vibrant flavor to this salad. You can buy the grapefruit pre-segmented, if you’d like – I get mine at Trader Joe’s!
🍊 Orange: The sweetness of the orange helps to offset the tartness of the grapefruit, for the perfect balance of flavor in this summertime salad.
Next, wash and chop the radicchio, kale, and romaine, and transfer them to a large bowl.
🌻 Sunflower Seeds: In my opinion, any good salad needs a crunchy element, and in this salad, it’s the sunflower seeds! Plus, sunflower seeds are high in both protein and fiber, making them a true superfood in this recipe.
🫒 Olive Oil: Of course, the magic in this salad lies within the healthy fats, and olive oil is the king of healthy fats! It’s rich, it’s filling, and it makes for the perfect base for the dressing of this salad.
🧅 Shallots: Shallots may be small, but they’re packed with flavor, which makes them perfect for this dressing.
🧄 Garlic: I always recommend using fresh garlic, whenever possible. It adds the best flavor to this dressing!
Dijon Mustard: A little dijon mustard adds the right amount of tang to the dressing. Don’t skip this!
🍋 Lemon: Of course, it wouldn’t be a lemon vinaigrette without the lemon juice and zest! You’ll need the juice and zest of one whole lemon, for this recipe.
🧂 Sea Salt & Ground Black Pepper: A pinch of salt and pepper adds the perfect finishing touch to the dressing – don’t skip this!

Finally, pour in the dressing and toss to fully combine. Once the salad is tossed, taste and adjust the seasonings as needed. Then, serve and enjoy!
