    Friends, it’s 2023, and let’s be honest: groceries are expensive these days. No matter where it is that you live, grocery prices are on the rise, which means budget-friendly meals are more important than ever. While I love sharing recipes that use “fancier” ingredients, like salmon, steak, or scrambled eggs (which, let’s be honest, are a hot commodity these days), it’s equally as important to me to share recipes that can appeal to everyone.

    Which is why, when I was dreaming up a delicious, healthy, and budget-friendly snack idea, crispy fried artichokes immediately came to mind. Artichokes are packed with antioxidants and are a great source of fiber, vitamins C and K, and potassium. They can even help lower cholesterol and improve digestion. Plus, they’re low in calories and fat, making them an excellent choice for anyone looking for a healthy snack.

    And, not to mention, canned artichokes are incredibly inexpensive, making them the perfect option for those on a budget!

    To make these Oven Baked Crispy Parmesan Artichoke Hearts, you’ll need canned artichoke hearts, eggs, parmesan cheese, breadcrumbs, and seasonings

    First, start by draining the water from your artichoke and patting them dry with a paper towel

    What You Need to Make These Bite-Sized Artichoke Hearts

    • Eggs: You will need two eggs in order to make the egg wash to dredge these artichoke hearts in!
    • Artichoke Hearts: Of course, you’ll need artichoke hearts in order to make this recipe! I love the canned artichoke hearts that you can find in the grocery store – not only are they delicious, but they are also inexpensive.
    • Panko or Plain Bread Crumbs: Pick your favorite bread crumb and use it in this recipe! Whether that’s panko, plain bread crumbs, or gluten-free bread crumbs, any of them will work well in this recipe.
    • Parmesan Cheese: Freshly grated parmesan cheese adds the best flavor to these artichoke hearts. I highly recommend it! If you want to make these artichoke hearts dairy-free, you can swap out the parmesan cheese for a vegan-friendly alternative.
    • Seasonings: We’ll be seasoning these artichoke hearts with a combination of onion powder, Italian seasoning, sea salt, and black pepper. Yum!

    In two separate bowls, prepare your egg wash and breadcrumbs. In one bowl, crack your eggs and beat them together. And in another bowl, mix together your bread crumbs, parmesan cheese, and seasonings.

    The Perfect Dipping Sauce For These Crispy Artichoke Hearts

    And if you’re wondering, “Nicole, what can I dip these artichoke hearts in?” then let me tell you: there are so man amazing options!

    While marinara sauce is the most obvious option, I also love to dip these crispy artichoke hearts in my Spicy Tahini Ranch Dressing for a spicy kick, or my Ultimate Green Goddess Dressing for an extra dose of herbs and greens. Yum!

    One-by-one, dredge each artichoke into the egg mixture, then place it into the breadcrumb mixture until they’re fully coated in the bread crumbs. Place the coated artichoke heart onto the baking sheet, then repeat until all of your artichoke hearts have been coated in the bread crumbs.

    How to Make These Crispy Breaded Artichoke Hearts

    To make these Crispy Artichoke Hearts, start by preheating your oven to 425 F. If you want to use an air fryer, preheat your air fryer to 375 F. Next, line a baking sheet with parchment paper and set it aside. You may want to spray the tray first, so that the parchment paper sticks to it.

    Drain your artichokes and pat them dry with a paper towel. Then, set them aside. Then, in a bowl, whisk together your eggs. Set them aside and in a separate bowl, mix together your breadcrumbs, parmesan cheese, onion powder, Italian seasoning, salt and pepper.

    Once your artichoke hearts are crispy and baked, serve them alongside your favorite dipping sauce and enjoy!

    One-by-one, dredge each artichoke into the egg mixture, then place it into the breadcrumb mixture until they’re fully coated in the bread crumbs. Place the coated artichoke heart onto the baking sheet, then repeat until all of your artichoke hearts have been coated in the bread crumbs.

    If you’re using an oven, bake your artichoke hearts for 18-20 minutes, being sure to flip them at the halfway point. If you’re using an air fryer,  air fry your artichoke hearts for 7 minutes, then flip and air fry for another 7 minutes.

    Finally, once they’re done, serve them with your favorite dipping sauce, and enjoy!

    • 1 Air Fryer this is optional, but if you don't want to use an oven, I love this one!

    Ingredients

    • 2 14 Ounce Cans Artichoke Hearts, drained and patted dry
    • 2 Eggs, beaten
    • ½ Cup Panko or Plain Bread Crumbs
    • ½ Cup Parmesan Cheese, finely grated
    • 1 Teaspoon Onion Powder
    • 1 Tablespoon Italian Seasoning
    • 1 Teaspoon Sea Salt
    • 1 Teaspoon Black Pepper
    • Marinara Sauce, for dipping

    Instructions
