    Friends, if there is one thing that I have stopped buying in 2024, it is pre-made nut milks. Why? Well, for starters, with the rising cost of food in the United States, nut milks have become very expensive. Where I am in San Francisco, a single bottle of almond milk can run as much as $8-$12! Not only that, but the pre-made milks also tend to be filled with ingredients that I don’t love, such as added sugars which can leave me feeling bloated and sluggish. Not exactly the way that I want to spend my day.

    So, instead of buying pre-made nut milks that are less-than-satisfactory, I’ve been opting to make my own nut milks at home. And my favorite recipe so far? This Salted Caramel Cashew Milk. Now friends, rarely do I ever say that a nut milk recipe is so good, you could drink it straight by the glass. But when it comes to this cashew milk? It truly is that good! I have become obsessed with keeping a bottle of this milk on-hand, in my fridge, at all times, so that I always have a sweet and creamy drink on-hand to perk me up mid-day. I truly love this recipe so much, and I know that you will, too!

    To make this milk, you will need cashews, medjool dates, cold water, vanilla extract, and sea salt.

    Add all of the ingredients to a large blender. No need to soak the cashews ahead of time!

    The 5 Ingredients Needed to Make This Recipe

    • Cashews: Cashews are my favorite nut to use for nut milk. Why? For starters, they tend to yield a creamier milk than almonds do. But, unlike almonds, cashews don’t need to be soaked overnight (or at all) in order to for them to blend into a creamy, milky consistency. What could be better than that?
    • Medjool Dates: Dates are not only filled with healthy fats, but they also have a delicious caramel-y flavor. It’s why I use them in my fan-favorite Date Sweetened Caramel!
    • Cold Water: Cold water is what forms the base of this milk.
    • Vanilla Extract: The vanilla extract helps to bring out the caramel-y flavor of the dates- don’t skip this!
    • Sea Salt: A pinch of sea salt is what makes this milk truly taste like SALTED caramel!

    5 Ways to Use This Delicious, Dairy-Free Milk

    • Replace your morning coffee creamer: This Salted Caramel Cashew Milk tastes delicious in coffee, especially when it’s frothed and added to a latte!
    • Give a sweet boost to your morning oatmeal: Adding milk to oatmeal is a delicious way to make it creamy and sweet, and this cashew milk is no exception!
    • Drizzle it over pancakes: Ditch the maple syrup for a drizzle of this Salted Caramel Cashew Milk for a sweet twist to your morning pancakes.
    • Serve it with cereal: It isn’t cereal without the milk, and swapping out your usual plain milk for this Salted Caramel Cashew Milk is a delicious addition!

    How to Make This Cashew Milk in Just 2 Minutes

    To make this cashew milk, add all of the ingredients to a high-speed blender and blend for 2 minutes, until the liquid is completely smooth and no chunks of cashews and dates remain. Once it’s done, transfer it to large jars and store it in the fridge until you’re ready to enjoy it. It should stay good in the fridge for up to one week!

    • 2 Milk Bottles

    Ingredients

    • 1.5 Cups Raw Cashews
    • 5 Medjool Dates, pitted
    • 6 Cups Cold Water
    • 1 Tablespoon Vanilla Extract
    • ½ Teaspoon Sea Salt

    Instructions

      OH! MY! GOODNESS! This is THE BEST! I made a half batch ( to see if I would like it) and only put in 2 cups of water and it was like drinking the most flavorful whole milk. It tastes amazing! I will make the whole batch next time and add all of the water (unless I want to make ice cream out of it). I did not soak the cashews nor the dates and it did not need straining. I do have a Vitamix… Thank you for the recipe!

      The best milk I’ve ever had! Tastes like cream! I usually only add 4 dates and 5 cups of water because I like it a little more thick. So delicious. Thank you for this amazing recipe!
