Friends, can you believe that we’ve already reached the halfway point in the summer? I don’t know about you, but it feels like this year is completely flying by. Already, my boys and I have moved into a new house, we’ve been creating our own new schedules and routines, and we are gearing up for our first international family trip to… JAPAN! But for now, we have a recipe that is all-America: these Bacon Chicken Ranch Skewers. If you’re looking for a simple and easy recipe to throw onto the grill this summer season, then you are going to love these skewers. They come together with tender chicken thighs that are marinated to perfection with a little greek yogurt, ranch seasoning, dill, and garlic. If you’ve never marinated chicken in yogurt before, you MUST — it will change your life. The yogurt leaves the chicken moist and juicy, while also adding more protein to this recipe, which will keep you feeling fuller, longer.
Once the chicken is marinated, it’s then skewered with strips of crispy bacon, crunchy red onion, and juicy cherry tomatoes that are then grilled to perfection. What You Need to Make These Perfect Grilled Chicken Skewers
Chicken Thighs: I like using chicken thighs, because they’re tender and delicious, and turn out perfectly on the grill! Just be sure to cut the chicken thighs into cubes — if you want, you can also ask your butcher to do this for you!
Greek Yogurt: Creamy greek yogurt makes the chicken super moist while it cooks. Plus, it also
Ranch Seasoning: I get ranch seasoning at Trader Joe’s, but you can also use a ranch dressing packet from any grocery store! This seasoning blend adds a tangy and delicious flavor to the chicken that is truly unbeatable.
Dried Dill: A little dried dill brings out the flavor of the ranch seasoning and adds a delicious flavor to the sauce. Don’t skip it!
Garlic: I will always recommend using fresh garlic cloves in my recipes, and this recipe is no exception!
Bacon: Thin and crispy bacon tastes perfect with the chicken and ranch. I like to use sugar-free bacon, but any bacon that you prefer will work well, here.
Red Onions: Red onions are fresh and tangy and add a delicious flavor to the skewers.
Cherry Tomatoes: I love using cherry tomatoes here, because they’re small, crunchy, and perfect for skewering!
Ranch Dressing: For more of that extra ranch flavor, these Chicken Bacon Ranch Skewers are perfect when served with a little ranch dressing for dipping.
Once the chicken is marinated, prepare the skewers. Add a piece of the chicken onto the skewers, followed by a slice of the red onion, the folded bacon, and then a cherry tomato. Repeat the ingredients until the skewer is full, then set it aside.
How to Make These Easy Chicken Ranch Skewers
To make these chicken skewers, start by preparing the chicken. Cut the chicken thighs into cubes and add them to a bowl alongside the greek yogurt, ranch seasoning, dried dill, and garlic. Toss the chicken to coat it well, then place a cover on the bowl. Transfer the bowl into the fridge and allow the chicken to marinate for a minimum of 30 minutes.
Once the chicken is done marinating, preheat your grill to 500F. While the grill is preheating, prepare the skewers. Chop the bacon in half, fold the pieces, then set them aside. Then, place a piece of the chicken onto the skewers, followed by a slice of the red onion, the folded bacon, and then a cherry tomato. Repeat the ingredients until the skewer is full, then set it aside.
Once the grill is hot, add the chicken skewers to it and close the grill. Allow the skewers to cook, undisturbed, for 10 minutes.
Heat the grill to 500 F and cook the skewers, undisturbed, for 10 minutes. Then, flip them to the other side and cook them for another 10 minutes. The chicken should not stick to the grill!Once the skewers are done, transfer them to a plate. Serve them with a side of ranch dressing and enjoy!
Once the 10 minutes are up, open the grill cover and rotate the chicken skewers to the other side. The chicken should lift easily — if it sticks, it’s not ready to be flipped yet. If this is the case, cover the grill again and cook the chicken in 2 minute increments.
Once the chicken has been flipped, allow the skewers to cook for another 8-10 minutes, or until the chicken is cooked and reaches an internal temperature of 165F. Once the skewers are done, transfer them to a plate. Serve them with a side of ranch dressing and enjoy!
