Cinnamon Sweet Potato Fries

Do you know anyone who doesn’t like sweet potato fries? If you do, send them my way because I have a bone to pick! I am obsessed, to the point that I’m surprised that my skin isn’t orange from all the sweet potatoes I eat. Sweet potato toast, roasted sweet potatoes, sweet potato mash, you name it, I’m all over it.

Today I am sharing a quick and easy snack/dessert featuring cinnamon-y roasted fries, with drizzled Hu Kitchen chocolate on top. It’s pretty much the snack of my dreams that even your savory pals will like. Why? Because while sweet, they aren’t overly sweet. And if you needed another reason to eat your sweet potatoes, do it for the nutrients!

Sweet potatoes are high in vitamins and minerals, including iron, calcium, selenium, and they’re a good source of most of our B vitamins and vitamin C. One of the key nutritional benefits of sweet potato is that they’re high in an antioxidant known as beta-carotene, which turns into Vitamin A once you eat it!

Ingredients

  • 3 medium (orange) sweet potatoes (though Japanese sweet potatoes work well also)
  • 2 tbsp avocado oil
  • 2 tsp cinnamon
  • 2 tsp coconut sugar
  • 1 Hu Kitchen chocolate bar of choice (I used the Almond Butter Puffed Quinoa bar)

Instructions

  • Preheat oven to 425.
  • Line a baking sheet with parchment paper and set aside.
  • Scrub sweet potatoes, and slice them into fries, about 1/2 inch thick
  • In a medium size bowl, add the sweet potatoes, avocado oil, cinnamon, and coconut sugar, and toss to coat well.
  • Line the sweet potatoes on the baking sheet, and spread them out evenly into a single layer.
  • Bake for 25 minutes, or until they are nice and crunchy on the outside, using tongs to flip them at the half way point. Oven times vary, so keep an eye on them. 
  • Remove from oven and let cool. 
  • Meanwhile, melt the chocolate. I do this in the microwave, in 30-second increments. 
  • Drizzle chocolate on top, and ENJOY!!!
