    Let’s be honest: I love a good cocktail. Yet, something about this summer has made me love a non-alcoholic mocktail. A delicious, cool drink without the side effects of alcohol is just what the doctor ordered this season, which is why you are going to fall in-love with my Coconut Mojito Mocktail! This sweet, creamy, refreshing drink is perfect to sip on poolside, and the best part is, there are two simple and easy ways to make it. So, what are you waiting for?!     Friends, if you’ve been following my blog closely this summer, then you may know that summer 2022 is the season of mocktails. While I admittedly LOVE a good cocktail, there is something about these warm, summer days that leaves me wanting to be alcohol-free. Don’t get me wrong, a cocktail is still delicious every now-and-then. But when it comes to the summer, I love sipping on a cool, refreshing drink that won’t leave me with a hangover the next day!

    And when it comes to that cool, refreshing drink, there’s nothing better than one that incorporates those tropical, summertime flavors, like coconut! I love how sweet and creamy the coconut makes this drink, while also making me feel like I’m sitting on the beach, somewhere tropical, without a care in the world. Okay, maybe that’s a little bit of an exaggeration, but this drink is definitely serving up the vacation vibes!

    So, I recommend making yourself a tall glass of it, sitting down somewhere in the sunshine, and pretending that you’re on the beach as you sip it. Who knows, maybe it will help us manifest the perfect beach vacation next summer!

    What You Need to Make This Delicious Summertime Mocktail

    All you need are six, simple and easy ingredients to bring this mocktail to life! It’s so easy, and you may already have the ingredients sitting in your pantry. 🙂

    • Coconut Milk: Of course, you’ll need coconut milk in order to make this Coconut Mojito Mocktail! You’ll want to use light, canned coconut milk in this recipe, as it yields the best result.
    • Lime: The lime will not only help the salt stick to the rim of the glass, but adds the perfect amount of “tang” to this mocktail recipe. I use one whole lime!
    • Ginger Beer: Despite its name, ginger beer is actually alcohol-free, and is made from fermented ginger. It’s absolutely delicious, and makes for the perfect base, for this recipe!
    • Sparkling Seltzer: In addition to the ginger beer, you will also want to use a sparkling seltzer or sparkling water in this recipe.
    • Mint Leaves: You’ll need an abundance of fresh mint leaves, for this recipe! I recommend getting a nice, large bunch of mint. After all, it wouldn’t be a mojito without it!
    • Sea Salt: A sea salt-rimmed glass truly takes this mocktail to the next level. I used a mango chili sea salt, but traditional sea salt will do!

    Two Ways to Make This Refreshing Coconut Mocktail

    As noted in the title of this post, there are two different methods to making this mocktail recipe. Both are super easy, and yield an equally-as-delicious result. Just pick your favorite method and go to town!

    Method 1: For the first method, start by pouring your sea salt into a small dish. Then, cut your lime into slices, and rub one of the slices along the rim of a tall glass, so that the lime juice coats it. Place the glass rim-down into the sea salt, and rotate until the sea salt sticks to the rim of the glass. Set aside, then repeat with your second glass.

    Once the rims of both glasses are coated in the sea salt, divide your mint leaves between the two glasses. Then, using a muddler or a spoon, muddle the mint leaves together until the minty smell begins to release. This is key to achieving that perfect mojito flavor!

    Then, divide your coconut milk amongst the two glasses, followed by the lime juice, ginger beer, sparkling seltzer or water, and ice cubes, if desired. Finally, give your drink a big stir, until the ingredients are fully incorporated, and serve immediately!

    Method 2: In this simple and easy method for making this mocktail, start by preparing your glasses the same way. Then, add all of your mocktail ingredients to a blender and blend until smooth!

    Divide your mocktail between two glasses, serve immediately, and enjoy! It’s as simple as that!

    Ingredients

    • ½ Cup Light Canned Coconut Milk
    • 1 Lime
    • 4 Ounces Ginger Beer
    • 4 Ounces Sparkling Seltzer or Sparkling Water
    • 20 Mint Leaves

    Instructions 

    Method 1:

      Created these for a Christmas party and everyone loved it! Called them “Snowjitos” because of the color 🙂
      They’re also vegan, a nice touch
