Plus, they're topped with a creamy icing, which makes each bite taste like a delicious lemon loaf. Just spend a few minutes making a big batch of these bites at the beginning of the week, and you'll have the perfect treat to enjoy in a pinch!

    Soft and pillowy lemon bites are the perfect sweet treat, anytime of day. These are my No-Bake Lemon Bites, and they are made to perfection with just a few simple, plant-based ingredients. Plus, they’re topped with a creamy icing, which makes each bite taste like a delicious lemon loaf. Just spend a few minutes making a big batch of these bites at the beginning of the week, and you’ll have the perfect treat to enjoy in a pinch!

    For the days when I find myself craving a sweet mid-day treat, I love having these lemon bites in the fridge to snack on. These sweet and simple bites are gluten-free and packed with healthy plant-based fats and protein, which means that they will help you feel fuller, longer!

    Plus, these are a no-bake treat, which means that there’s no lengthy bake time required to make them. Instead, it just takes a few minutes to prepare the bites, and allow them to set in the fridge. I love to prepare a batch of these at the beginning of the week and have them to snack on all throughout the week. And, bonus points: my boys love these bites too, which means they’re perfect for kids!

    And if you’re looking for more sweet treats to meal-prep and keep in the fridge or freezer, you have to try my No-Bake Tagalong Cookie Bites or my delicious Chocolate Chickpea Truffles. These are such simple and easy recipes that can be prepped in a matter of minutes, and are the perfect addition to your meal prep rotation!

    To make these bites, you will need almond flour, coconut flour, macadamia nuts, lemon juice, vanilla extract, sea salt, collagen peptides, maple syrup, coconut sugar, powdered sugar, and water.

    Add the wet ingredients to a small bowl, and whisk until they’re fully combined. Next, in a separate bowl, combine the dry ingredients. Then, pour the wet ingredients into the dry ingredients and mix to fully combine.

    What You Need to Make These Grain-Free Lemon Bites

    • Almond Flour: Almond flour is one of my favorite gluten-free flours, because it’s naturally grain-free and filled with healthy fats and plant-based protein.
    • Coconut Flour: The combination of almond flour and coconut flour is truly unbeatable. Coconut flour is light and fluffy, which can help offset some of the density of the almond flour.
    • Macadamia Nuts: Macadamia nuts are salty and mild, and are packed with healthy fats! Since macadamia nuts can be a little on the pricier side, I recommend getting them from Trader Joe’s, for the best price.
    • Lemon Juice: After all, these wouldn’t be lemon bites without the lemon juice! The juice of one whole lemon adds the perfect flavor to this recipe.

    Using your hands or a cookie scoop, scoop the dough into 12 even-sized balls. Line a baking sheet with parchment paper, then place each ball onto the parchment paper.
    • Vanilla Extract: Vanilla extract is essential when it comes to making any sweet treat, and these lemon bites are no exception!
    • Sea Salt: A pinch of sea salt ensures that these bites don’t turn out too sweet.
    • Collagen Peptides: These are optional, but I love adding collagen peptides to this recipe, for an extra boost of protein.
    • Maple Syrup: Maple syrup adds the perfect amount of natural sweetness to these bites.
    • Coconut Oil: Since this recipe is naturally vegan-friendly, the coconut oil acts as a binder to keep these bites together.
    • Powdered Sugar: The base of the icing is powdered sugar. If you want a refined sugar-free substitute, you can use powdered monk fruit sweetener, instead.
    • Water: A little bit of water helps to thin out the icing, so that it reaches the perfect consistency!

    How to Make These Simple & Sweet Lemon Bites


    To make these bites, start by preparing the wet ingredients. Add the melted coconut oil, maple syrup, vanilla extract, and lemon juice to a small bowl, and whisk until they’re fully combined.

    Next, in a separate bowl, combine the dry ingredients: the almond flour, coconut flour, macadamia nuts, sea salt, and collagen peptides (if using). Then, pour the wet ingredients into the dry ingredients and mix to fully combine. Using your hands or a cookie scoop, scoop the dough into 12 even-sized balls. Line a baking sheet with parchment paper, then place each ball onto the parchment paper.

    Transfer the baking sheet to the refrigerator and allow the bites to set for 20-30 minutes. Once they’re done, remove from the fridge and enjoy! Store any leftovers back in the fridge, for up to one week.

    Next, prepare the icing. Add the powdered sugar, water, and lemon juice to a small bowl, and whisk to fully combine. Then, spoon a little bit of the icing on top of each of the lemon bites.

    Ingredients

    For the Bites
    • 2 Cups Almond Flour
    • 4 Tablespoons Coconut Flour
    • ¼ Cup Macadamia Nuts, chopped
    • 1 Lemon, juiced
    • 1 Teaspoon Vanilla Extract

    • 1 Scoop Collagen Peptides, optional

      These are amazing! A burst of lemon flavor. My guests raved about them. I subbed sugar free white chocolate chips for the icing. Melted them with a bit of coconut oil and lemon zest, then drizzled on top.
