No Mayo Creamy Cucumber Salad

There is nothing more refreshing than a light, crispy, cucumber salad, and this recipe may just be my most favorite one yet. That’s right, my Creamy Cucumber Salad is not only a delicious, nourishing cucumber salad recipe that you will LOVE, but it is also mayo-free! For all of my fellow mayo-haters out there (I’m sorry, but I just can’t do it), this is the salad for you. It is perfectly creamy, gluten-free, and can easily be made dairy-free as well!

Friends, summer may have officially come to a close, but that doesn’t mean that I’m done sharing the crispy, crunchy, refreshing salad recipes! In fact, I am a firm believer that a good salad recipe is perfect anytime of year, whether it’s summer or not. From my Crunchy Apricot Kale Salad to my Ultimate Kale Tabouleh, the perfect salad recipe transcends any season, and tastes delicious any time!

And when it comes to salads, this may just be my easiest salad recipe yet. While I strive for ALL of my recipes here on Kalejunkie to be healthy, simple, and easy, this cucumber salad could not be easier. It comes together in only 5 minutes, with just a few super simple and easy ingredients. Plus, no crazy chopping required! You can simply slice your red onion and cucumbers with a mandolin and eliminate all of your vegetable chopping. If you’re someone who dreads making salads from scratch because of all the chopping required, then this is the recipe for you!

Plus… did I mention that this salad is also mayo-free?! It’s true! For all of my friends who are also not the biggest fan of mayonnaise, this recipe is for YOU. Instead of using mayo, we’ll be using greek yogurt to achieve the perfect, creamy consistency for this dressing. And if you want to make this recipe vegan-friendly? Simply swap out the greek yogurt for a plant-based yogurt! It’s as simple as that!

What You Need to Make This Refreshing Cucumber Salad

All you need are 7 easy ingredients to bring this salad to life!

  • English Cucumber: It wouldn’t be a cucumber salad without the cucumbers, after all! I love using English cucumber in this recipe because it’s nice and crispy, and slices perfectly thin with a mandolin.
  • Fresh Dill: Fresh dill adds the perfect, herbaceous touch to this salad. Don’t skip it! Plus, the combination of dill and greek yogurt is a truly delicious pairing.
  • Red Onion: Sliced red onion adds the perfect amount of tang, and, not to mention, a beautiful bright red color!
  • Garlic: Fresh garlic adds the perfect flavor to this salad, and I will always recommend it over garlic powder!
  • Greek Yogurt: Instead of using mayo in this recipe, we’ll be using greek yogurt to give this salad its perfect, creamy texture. If you want to keep this salad vegan-friendly or dairy-free, you can use a plant-based yogurt instead!
  • Red Wine Vinegar: A splash of red wine vinegar helps to cut through the thickness of the yogurt and form the perfect dressing!
  • Sea Salt and Black Pepper: Of course, we’re finishing off this salad with a healthy dose of sea salt and black pepper, because no salad would be complete without it!

How to Make This Quick & Easy Cucumber Salad

Making the salad is truly the easiest part! Simply start by washing and chopping your vegetables. Slice your cucumber and red onion thin using a sharp knife or a mandolin, and place them into a large bowl.

Next, chop your dill and garlic thin, and add them to the bowl with the cucumber and red onion. Finally, add in the remaining ingredients – the greek yogurt, red wine vinegar, sea salt, and black pepper. Toss until all of the ingredients are fully combined, then serve and enjoy! Store any leftovers in an airtight container in the fridge for up to three days.

Ingredients

  • 1 English Cucumber sliced thin
  • 3 Tablespoons Fresh Dill
  • ¼ Red Onion sliced thin
  • 1 Clove Garlic mashed
  • Cup Greek Yogurt or substitute a plant-based yogurt
  • 2 Tablespoons Red Wine Vinegar
  • Sea Salt to taste
  • Black Pepper to taste

Instructions

  • Start by washing and chopping your vegetable; slice your cucumber and red onion thin using a sharp knife or a mandolin, and place them into a large bowl.
  • Next, chop your dill and garlic thin, and add them to the bowl with the cucumber and red onion. 
  • Finally, add in the remaining ingredients – the greek yogurt, red wine vinegar, sea salt, and black pepper.
  • Toss until all of the ingredients are fully combined, then serve and enjoy!
  • Store any leftovers in an airtight container in the fridge for up to three days.

    Delicious! I used dried dill because I didn’t have fresh. This was a light refreshing side dish. I loved the addition of red onion.
